Description

Sweet and buttery cornbread poppers that are crispy on the outside and soft on the inside, perfect as a snack or side for any meal.


Ingredients

  • 1 cup cornmeal
  • 1 cup all-purpose flour
  • ยผ cup sugar
  • 1 tablespoon baking powder
  • ยฝ teaspoon salt
  • ยฝ cup butter, melted
  • ยผ cup honey
  • 1 cup buttermilk
  • 2 eggs


Instructions

  1. Preheat oven to 375ยฐF (190ยฐC). Grease a mini muffin pan.
  2. In a large bowl, whisk together cornmeal, flour, sugar, baking powder, and salt.
  3. In another bowl, mix melted butter, honey, buttermilk, and eggs until combined.
  4. Pour wet ingredients into dry ingredients and mix until just combined.
  5. Spoon batter into the mini muffin pan, filling each cup about ยพ full.
  6. Bake for 12โ€“15 minutes or until golden brown and a toothpick comes out clean.
  7. Allow to cool slightly before serving.
