Description

This Jalapeño Popper Meatloaf is a spicy twist on a classic comfort dish, packed with melted cheddar, cream cheese, and fresh jalapeños for a creamy, cheesy, and flavorful weeknight dinner.


Ingredients

  • 1 ½ pounds ground beef (or preferred ground meat)
  • 1 cup breadcrumbs
  • 1 cup shredded cheddar cheese
  • ½ cup cream cheese, softened
  • 23 fresh jalapeños, diced (adjust to taste)
  • ½ onion, finely chopped
  • 2 cloves garlic, minced
  • 1 egg
  • 1 tablespoon Worcestershire sauce
  • 1 tablespoon mustard
  • Salt and pepper, to taste
  • ½ cup ketchup (for topping)


Instructions

  1. Preheat oven to 375°F (190°C).
  2. In a large bowl, combine ground beef, breadcrumbs, shredded cheddar, cream cheese, diced jalapeños, onion, garlic, egg, Worcestershire sauce, mustard, salt, and pepper.
  3. Shape mixture into a loaf and place in a greased baking dish.
  4. Spread ketchup evenly over the top of the meatloaf.
  5. Bake for 50–60 minutes until cooked through and internal temperature reaches 160°F (71°C).
  6. Let rest 10 minutes before slicing and serving.
