Description
This Jalapeño Popper Meatloaf is a spicy twist on a classic comfort dish, packed with melted cheddar, cream cheese, and fresh jalapeños for a creamy, cheesy, and flavorful weeknight dinner.
Ingredients
- 1 ½ pounds ground beef (or preferred ground meat)
- 1 cup breadcrumbs
- 1 cup shredded cheddar cheese
- ½ cup cream cheese, softened
- 2–3 fresh jalapeños, diced (adjust to taste)
- ½ onion, finely chopped
- 2 cloves garlic, minced
- 1 egg
- 1 tablespoon Worcestershire sauce
- 1 tablespoon mustard
- Salt and pepper, to taste
- ½ cup ketchup (for topping)
Instructions
- Preheat oven to 375°F (190°C).
- In a large bowl, combine ground beef, breadcrumbs, shredded cheddar, cream cheese, diced jalapeños, onion, garlic, egg, Worcestershire sauce, mustard, salt, and pepper.
- Shape mixture into a loaf and place in a greased baking dish.
- Spread ketchup evenly over the top of the meatloaf.
- Bake for 50–60 minutes until cooked through and internal temperature reaches 160°F (71°C).
- Let rest 10 minutes before slicing and serving.
Notes
- Adjust jalapeño quantity for milder or spicier meatloaf.
- Leftovers store well in the refrigerator for up to 3 days.
- Serve with mashed potatoes, roasted vegetables, or a simple salad for a complete meal.
