Ingredients
- 1 lb ground beef
- 1 packet (1 oz) ranch dressing mix
- 2 cups uncooked rotini pasta
- 1 tbsp olive oil
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 1 can (15.25 oz) sweet corn, drained
- 1 can (10.75 oz) condensed cream of mushroom soup
- 1 cup sour cream
- 2 cups shredded cheddar cheese, divided
- Salt and pepper, to taste
- ยผ cup fresh parsley, chopped (optional for garnish)
Instructions
- Preheat oven to 375ยฐF (190ยฐC) and grease a 9×13-inch baking dish.
- Cook rotini pasta according to package instructions, drain, and set aside.
- In a large skillet, heat olive oil over medium heat. Cook ground beef until browned. Add onion and garlic; sautรฉ until softened.
- Stir in ranch dressing mix, cream of mushroom soup, sour cream, sweet corn, and half of the cheddar cheese. Mix well.
- Add cooked rotini pasta and fold until evenly coated.
- Transfer mixture to prepared baking dish. Top with remaining cheddar cheese.
- Bake 20โ25 minutes until cheese is melted and bubbly. Garnish with chopped parsley if desired.

- Substitute ground turkey or chicken for a lighter version.
