Description

Loaded Cheddar Ranch Beef and Sweet Corn Rotini Bake is a creamy, cheesy, and hearty casserole combining seasoned ground beef, rotini pasta, sweet corn, and a rich cheddar ranch sauce. Perfect for easy weeknight dinners the whole family will love.


Ingredients

  • 1 lb ground beef
  • 1 packet (1 oz) ranch dressing mix
  • 2 cups uncooked rotini pasta
  • 1 tbsp olive oil
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 can (15.25 oz) sweet corn, drained
  • 1 can (10.75 oz) condensed cream of mushroom soup
  • 1 cup sour cream
  • 2 cups shredded cheddar cheese, divided
  • Salt and pepper, to taste
  • ยผ cup fresh parsley, chopped (optional for garnish)


Instructions

  1. Preheat oven to 375ยฐF (190ยฐC) and grease a 9×13-inch baking dish.
  2. Cook rotini pasta according to package instructions, drain, and set aside.
  3. In a large skillet, heat olive oil over medium heat. Cook ground beef until browned. Add onion and garlic; sautรฉ until softened.
  4. Stir in ranch dressing mix, cream of mushroom soup, sour cream, sweet corn, and half of the cheddar cheese. Mix well.
  5. Add cooked rotini pasta and fold until evenly coated.
  6. Transfer mixture to prepared baking dish. Top with remaining cheddar cheese.
  7. Bake 20โ€“25 minutes until cheese is melted and bubbly. Garnish with chopped parsley if desired.
