Ingredients

  • 1 tablespoon olive oil
  • 1 small onion, finely chopped
  • 3 garlic cloves, minced
  • 1/2 teaspoon red pepper flakes (optional)
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon dried thyme
  • 1/2 teaspoon paprika
  • 1/4 cup sun-dried tomatoes (in oil), chopped
  • 1 cup dry green or brown lentils, rinsed
  • 2 1/2 cups vegetable broth
  • 1/2 cup canned coconut milk or heavy cream (for richness)
  • 2 tablespoons tomato paste
  • Salt and pepper to taste
  • Fresh basil or parsley, for garnish (optional)


Instructions

  1. Heat olive oil in a large saucepan over medium heat. Add onion and sautรฉ until translucent, about 3โ€“4 minutes.
  2. Add garlic, red pepper flakes, oregano, thyme, and paprika. Stir for 1 minute until fragrant.
  3. Add sun-dried tomatoes and tomato paste, cooking for another 1โ€“2 minutes.
  4. Add lentils and vegetable broth. Bring to a boil, then reduce heat to a simmer. Cover and cook for 25โ€“30 minutes until lentils are tender.
  5. Stir in coconut milk or heavy cream. Adjust seasoning with salt and pepper.
