Description
These Marshmallow Hot Cocoa Surprise Cookies are soft, chocolaty, and filled with melty marshmallows and semi-sweet chocolate chunks. Perfect for cozy winter evenings or festive treats!
Ingredients
- 1/2 cup (8 Tbsp; 113g) unsalted butter, softened to room temperature
- 1/2 cup (100g) granulated sugar
- 1/2 cup (100g) packed light or dark brown sugar
- 1 large egg, at room temperature
- 1 teaspoon pure vanilla extract
- 1 and 1/2 cups (188g) all-purpose flour (spooned & leveled)
- 1/3 cup (27g) natural unsweetened cocoa powder
- 1/4 cup (40g) dry hot cocoa mix
- 1 teaspoon baking soda
- 1/8 teaspoon salt
- 2 teaspoons (10ml) milk (any kind, dairy or nondairy)
- Topping: 10โ11 large marshmallows, cut in half
- 8 ounces (226g) semi-sweet chocolate, finely chopped
Instructions
- Preheat oven to 350ยฐF (175ยฐC) and line a baking sheet with parchment paper.
- In a large bowl, cream together butter, granulated sugar, and brown sugar until light and fluffy.
- Add egg and vanilla extract, mixing until smooth.
- In a separate bowl, whisk together flour, cocoa powder, hot cocoa mix, baking soda, and salt.
- Gradually mix dry ingredients into wet ingredients, adding milk to help combine.
- Fold in chopped semi-sweet chocolate.
- Drop cookie dough by rounded tablespoons onto prepared baking sheet. Gently press a marshmallow half onto each cookie.
- Bake for 10โ12 minutes, or until cookies are set but still soft. Allow to cool slightly before serving.
Notes
- Use mini marshmallows for a more even melt.
- For extra chocolate flavor, drizzle melted chocolate on top before serving.
- Store in an airtight container for up to 3 days.
