Ingredients

  • 2 sheets puff pastry, thawed (store-bought or homemade)
  • 2 cups fresh spinach, chopped (or baby kale/Swiss chard)
  • 1 cup ricotta cheese (or cottage cheese)
  • ยฝ cup Parmesan cheese, grated (or Pecorino Romano)
  • 1 egg, beaten (for egg wash)
  • 1 tsp garlic powder (or fresh minced garlic)
  • Salt and pepper, to taste
  • 1 tbsp olive oil (optional, for sautรฉing spinach)


Instructions

  1. Preheat oven to 400ยฐF (200ยฐC).
  2. If using, heat olive oil in a pan and sautรฉ spinach until wilted. Let cool slightly.
  3. In a bowl, mix spinach, ricotta, Parmesan, garlic powder, salt, and pepper until combined.
  4. Roll out puff pastry sheets and cut into squares (about 4โ€“5 inches each).
  5. Place a spoonful of the spinach mixture in the center of each square.
  6. Fold the pastry over the filling to form triangles or rectangles. Press edges to seal.
  7. Brush the tops with beaten egg.
  8. Bake 15โ€“20 minutes or until golden brown and puffed.
