Description
These Mediterranean Spinach Stuffed Pastries are golden, flaky, and filled with a creamy spinach and ricotta mixture. Perfect as appetizers, snacks, or a light meal, they are irresistibly delicious and packed with Mediterranean flavors.
Ingredients
- 2 sheets puff pastry, thawed (store-bought or homemade)
- 2 cups fresh spinach, chopped (or baby kale/Swiss chard)
- 1 cup ricotta cheese (or cottage cheese)
- ยฝ cup Parmesan cheese, grated (or Pecorino Romano)
- 1 egg, beaten (for egg wash)
- 1 tsp garlic powder (or fresh minced garlic)
- Salt and pepper, to taste
- 1 tbsp olive oil (optional, for sautรฉing spinach)
Instructions
- Preheat oven to 400ยฐF (200ยฐC).
- If using, heat olive oil in a pan and sautรฉ spinach until wilted. Let cool slightly.
- In a bowl, mix spinach, ricotta, Parmesan, garlic powder, salt, and pepper until combined.
- Roll out puff pastry sheets and cut into squares (about 4โ5 inches each).
- Place a spoonful of the spinach mixture in the center of each square.
- Fold the pastry over the filling to form triangles or rectangles. Press edges to seal.
- Brush the tops with beaten egg.
- Bake 15โ20 minutes or until golden brown and puffed.
- Serve warm and enjoy!

- Substitute spinach with kale or Swiss chard for a different flavor.
