Ingredients

  • 1 lb boneless, skinless chicken thighs
  • 1 cup quinoa, rinsed
  • 3 Tbsp extra-virgin olive oil
  • 2 Tbsp fresh lemon juice
  • 2 cloves garlic, minced
  • 1 tsp dried oregano
  • 1/2 tsp smoked paprika
  • 1/4 tsp ground cumin
  • Salt and freshly ground black pepper, to taste
  • 1 cup plain Greek yogurt (full-fat)
  • 1/2 cucumber, grated and excess water squeezed out
  • 1 Tbsp fresh dill, finely chopped
  • 1 tsp lemon zest
  • Salt, to taste
  • 1 cup cherry tomatoes, halved


Instructions

  1. In a bowl, whisk together olive oil, lemon juice, garlic, oregano, paprika, cumin, salt, and pepper. Add chicken thighs, coat well, and marinate for 20โ€“30 minutes.
  2. Cook quinoa according to package instructions and fluff with a fork.
  3. Heat a skillet over medium-high heat and cook marinated chicken for 5โ€“6 minutes per side until golden and fully cooked. Slice or chop.
  4. Prepare tzatziki by mixing Greek yogurt, grated cucumber, dill, lemon zest, and salt.
  5. Assemble bowls with quinoa, chicken, cherry tomatoes, and a generous spoon of tzatziki.
