Ingredients
- 1 lb boneless, skinless chicken thighs
- 1 cup quinoa, rinsed
- 3 Tbsp extra-virgin olive oil
- 2 Tbsp fresh lemon juice
- 2 cloves garlic, minced
- 1 tsp dried oregano
- 1/2 tsp smoked paprika
- 1/4 tsp ground cumin
- Salt and freshly ground black pepper, to taste
- 1 cup plain Greek yogurt (full-fat)
- 1/2 cucumber, grated and excess water squeezed out
- 1 Tbsp fresh dill, finely chopped
- 1 tsp lemon zest
- Salt, to taste
- 1 cup cherry tomatoes, halved
Instructions
- In a bowl, whisk together olive oil, lemon juice, garlic, oregano, paprika, cumin, salt, and pepper. Add chicken thighs, coat well, and marinate for 20โ30 minutes.
- Cook quinoa according to package instructions and fluff with a fork.
- Heat a skillet over medium-high heat and cook marinated chicken for 5โ6 minutes per side until golden and fully cooked. Slice or chop.
- Prepare tzatziki by mixing Greek yogurt, grated cucumber, dill, lemon zest, and salt.
- Assemble bowls with quinoa, chicken, cherry tomatoes, and a generous spoon of tzatziki.
- Serve immediately and enjoy a fresh Mediterranean-inspired meal.
