Mississippi Chicken & Potatoes is a flavorful, easy-to-make comfort dish featuring juicy chicken breasts, seasoned potatoes, and a buttery ranch and gravy mix sauce topped with pepperoncini peppers and melted mozzarella cheese. Perfect for a hassle-free weeknight meal.
Ingredients
- 2 chicken breasts
- 4 medium/large potatoes
- Olive oil
- Salt, pepper, garlic powder, paprika (for potatoes)
- 1 tbsp Au Jus gravy mix
- 1/2 packet ranch seasoning
- 2 tbsp butter
- Pepperoncini or banana peppers
- 1 cup shredded mozzarella cheese
Instructions
- Preheat oven to 400ยฐF (200ยฐC).
- Cut potatoes into bite-sized pieces, toss with olive oil, salt, pepper, garlic powder, and paprika, and spread on a baking sheet.
- Place chicken breasts on top of or next to the potatoes.
- Sprinkle Au Jus gravy mix and ranch seasoning over the chicken.
- Dot butter over the chicken and potatoes.
- Add pepperoncini peppers on top.
- Bake for 25โ30 minutes, until chicken is cooked through and potatoes are tender.
- Remove from oven and sprinkle shredded mozzarella over the top. Return to oven for 5 minutes or until cheese melts.
- Serve warm and enjoy.
Notes
- Add extra peppers for more tangy flavor.
- You can use red, yellow, or Yukon potatoes.
- Leftovers store well in the fridge for 2โ3 days and reheat nicely.
