Description

Mississippi Chicken & Potatoes is a flavorful, easy-to-make comfort dish featuring juicy chicken breasts, seasoned potatoes, and a buttery ranch and gravy mix sauce topped with pepperoncini peppers and melted mozzarella cheese. Perfect for a hassle-free weeknight meal.


Ingredients

  • 2 chicken breasts
  • 4 medium/large potatoes
  • Olive oil
  • Salt, pepper, garlic powder, paprika (for potatoes)
  • 1 tbsp Au Jus gravy mix
  • 1/2 packet ranch seasoning
  • 2 tbsp butter
  • Pepperoncini or banana peppers
  • 1 cup shredded mozzarella cheese


Instructions

  1. Preheat oven to 400ยฐF (200ยฐC).
  2. Cut potatoes into bite-sized pieces, toss with olive oil, salt, pepper, garlic powder, and paprika, and spread on a baking sheet.
  3. Place chicken breasts on top of or next to the potatoes.
  4. Sprinkle Au Jus gravy mix and ranch seasoning over the chicken.
  5. Dot butter over the chicken and potatoes.
  6. Add pepperoncini peppers on top.
  7. Bake for 25โ€“30 minutes, until chicken is cooked through and potatoes are tender.
  8. Remove from oven and sprinkle shredded mozzarella over the top. Return to oven for 5 minutes or until cheese melts.
  9. Serve warm and enjoy.

Notes

  • Add extra peppers for more tangy flavor.
  • You can use red, yellow, or Yukon potatoes.
  • Leftovers store well in the fridge for 2โ€“3 days and reheat nicely.
