Monster Cookie Fudgy Brownies combine thick, ultra-fudgy brownies with soft peanut butter monster cookie dough baked right on top. Each bite is loaded with chocolate chips, M&Mโ€™s, oats, and rich brownie goodness.


Ingredients

Brownies

  • 1 1/3 cups white granulated sugar
  • 2 large eggs
  • 1 egg yolk
  • 5 tbsp unsalted butter
  • 1/3 cup oil (canola or vegetable)
  • 1 tsp pure vanilla extract
  • 1/2 cup all-purpose flour
  • 3/4 cup unsweetened Dutch-process cocoa powder
  • 1 tbsp cornstarch
  • 1/4 tsp salt
  • 1/2 cup semi-sweet chocolate chips
  • 1/2 cup milk chocolate chips

Monster Cookie Dough

  • 1/2 cup all-purpose flour
  • 1 tsp cornstarch
  • 1/2 tsp baking soda
  • 1/8 tsp baking powder
  • 1/4 tsp salt
  • 1/4 cup unsalted butter, room temperature
  • 1/3 cup packed brown sugar
  • 1/8 cup white granulated sugar
  • 1/4 cup creamy peanut butter
  • 1 tsp pure vanilla extract
  • 1 large egg, room temperature
  • 1/2 cup quick oats
  • 1/2 cup mini chocolate chips
  • 1/2 cup mini M&Mโ€™s


Instructions

  1. Preheat oven to 350ยฐF (175ยฐC). Line an 8ร—8-inch baking pan with parchment paper.
  2. Make the brownie batter: Melt butter, then whisk in sugar, eggs, egg yolk, oil, and vanilla until smooth. Add flour, cocoa powder, cornstarch, and salt. Fold in chocolate chips.
  3. Spread brownie batter evenly into the baking pan.
  4. Make the monster cookie dough: Beat butter, brown sugar, and white sugar until creamy. Mix in peanut butter, vanilla, and egg.
  5. Add flour, cornstarch, baking soda, baking powder, salt, and oats. Fold in mini chocolate chips and mini M&Mโ€™s.
  6. Drop spoonfuls of cookie dough evenly on top of the brownie batter. Gently press down.
  7. Bake 28โ€“35 minutes, depending on desired fudginess. The center should still be slightly soft.
  8. Cool completely before slicing for the fudgiest texture.
