Description

This One-Pan Honey Garlic Kielbasa & Veggies is a simple, flavorful meal. Sliced kielbasa is roasted with colorful vegetables and coated in a sweet and savory honey garlic sauce — all done in one pan for easy cleanup.


Ingredients

  • 1 (14 oz) kielbasa sausage, sliced into ½-inch rounds
  • 2 cups baby potatoes, halved
  • 1 red bell pepper, chopped
  • 1 yellow bell pepper, chopped
  • 1 cup baby carrots, halved lengthwise
  • 2 tablespoons olive oil
  • Salt and pepper, to taste
  • Honey Garlic Sauce:
  • ¼ cup honey
  • 3 tablespoons soy sauce
  • 2 cloves garlic, minced
  • 1 tablespoon Dijon mustard (optional)


Instructions

  1. Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Place potatoes, bell peppers, carrots, and kielbasa on the baking sheet. Drizzle with olive oil and season with salt and pepper. Toss to coat evenly.
  3. In a small bowl, whisk together honey, soy sauce, minced garlic, and Dijon mustard to make the sauce.
  4. Drizzle half of the honey garlic sauce over the vegetables and kielbasa.
  5. Roast in the preheated oven for 20–25 minutes, stirring halfway, until vegetables are tender and kielbasa is browned.
  6. Remove from oven and drizzle with the remaining honey garlic sauce before serving.

Notes

  • Feel free to swap baby potatoes with sweet potatoes for a twist.
  • Optional: sprinkle chopped parsley on top for garnish.
  • Leftovers store well in the fridge for up to 3 days.
