Description
This One-Pan Honey Garlic Kielbasa & Veggies is a simple, flavorful meal. Sliced kielbasa is roasted with colorful vegetables and coated in a sweet and savory honey garlic sauce — all done in one pan for easy cleanup.
Ingredients
- 1 (14 oz) kielbasa sausage, sliced into ½-inch rounds
- 2 cups baby potatoes, halved
- 1 red bell pepper, chopped
- 1 yellow bell pepper, chopped
- 1 cup baby carrots, halved lengthwise
- 2 tablespoons olive oil
- Salt and pepper, to taste
- Honey Garlic Sauce:
- ¼ cup honey
- 3 tablespoons soy sauce
- 2 cloves garlic, minced
- 1 tablespoon Dijon mustard (optional)
Instructions
- Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
- Place potatoes, bell peppers, carrots, and kielbasa on the baking sheet. Drizzle with olive oil and season with salt and pepper. Toss to coat evenly.
- In a small bowl, whisk together honey, soy sauce, minced garlic, and Dijon mustard to make the sauce.
- Drizzle half of the honey garlic sauce over the vegetables and kielbasa.
- Roast in the preheated oven for 20–25 minutes, stirring halfway, until vegetables are tender and kielbasa is browned.
- Remove from oven and drizzle with the remaining honey garlic sauce before serving.
Notes
- Feel free to swap baby potatoes with sweet potatoes for a twist.
- Optional: sprinkle chopped parsley on top for garnish.
- Leftovers store well in the fridge for up to 3 days.
