Description

Overnight Blueberry French Toast Casserole is a decadent, make-ahead breakfast perfect for busy mornings or special occasions. Layers of soft French bread are soaked in a creamy egg mixture and cream cheese filling, bursting with sweet blueberries and warm vanilla-cinnamon flavors.


Ingredients

  • For the cream cheese mixture:
    • 1 cup blueberries
    • 8 oz cream cheese, softened
    • 1 cup powdered sugar
    • 1 tbsp vanilla extract (half for cream cheese, half for egg mixture)
    • 2 tbsp milk
  • For the bread layers:
    • 2 loaves cubed French bread (day-old works best)
  • For the egg mixture:
    • 1 cup blueberries
    • 1 tsp cinnamon
    • 2 cups milk
    • 8 large eggs
    • 1/2 tsp nutmeg


Instructions

  1. In a medium bowl, mix softened cream cheese, powdered sugar, 1/2 tbsp vanilla, 2 tbsp milk, and 1 cup blueberries until smooth. Set aside.
  2. Grease a 9×13 inch baking dish and layer half of the cubed bread on the bottom.
  3. Spread the cream cheese mixture evenly over the bread layer.
  4. Top with the remaining bread cubes.
  5. In a separate bowl, whisk together eggs, milk, remaining 1/2 tbsp vanilla, cinnamon, nutmeg, and 1 cup blueberries.
  6. Pour the egg mixture evenly over the layered bread and cream cheese.
  7. Cover and refrigerate overnight, or at least 6 hours.
  8. Preheat oven to 350ยฐF (175ยฐC). Bake uncovered for 45โ€“50 minutes until golden brown and set.
  9. Allow to cool slightly before serving. Optionally, drizzle with maple syrup or dust with powdered sugar.

Notes

  • Use day-old bread for better absorption of the custard.
  • Blueberries can be fresh or frozen, just thaw if frozen.
  • For extra flavor, sprinkle a crumb topping before baking.
