Description
Overnight Blueberry French Toast Casserole is a decadent, make-ahead breakfast perfect for busy mornings or special occasions. Layers of soft French bread are soaked in a creamy egg mixture and cream cheese filling, bursting with sweet blueberries and warm vanilla-cinnamon flavors.
Ingredients
- For the cream cheese mixture:
- 1 cup blueberries
- 8 oz cream cheese, softened
- 1 cup powdered sugar
- 1 tbsp vanilla extract (half for cream cheese, half for egg mixture)
- 2 tbsp milk
- For the bread layers:
- 2 loaves cubed French bread (day-old works best)
- For the egg mixture:
- 1 cup blueberries
- 1 tsp cinnamon
- 2 cups milk
- 8 large eggs
- 1/2 tsp nutmeg
Instructions
- In a medium bowl, mix softened cream cheese, powdered sugar, 1/2 tbsp vanilla, 2 tbsp milk, and 1 cup blueberries until smooth. Set aside.
- Grease a 9×13 inch baking dish and layer half of the cubed bread on the bottom.
- Spread the cream cheese mixture evenly over the bread layer.
- Top with the remaining bread cubes.
- In a separate bowl, whisk together eggs, milk, remaining 1/2 tbsp vanilla, cinnamon, nutmeg, and 1 cup blueberries.
- Pour the egg mixture evenly over the layered bread and cream cheese.
- Cover and refrigerate overnight, or at least 6 hours.
- Preheat oven to 350ยฐF (175ยฐC). Bake uncovered for 45โ50 minutes until golden brown and set.
- Allow to cool slightly before serving. Optionally, drizzle with maple syrup or dust with powdered sugar.
Notes
- Use day-old bread for better absorption of the custard.
- Blueberries can be fresh or frozen, just thaw if frozen.
- For extra flavor, sprinkle a crumb topping before baking.
