Description

Parmesan Cloud Chicken Bombs are tender, cheesy chicken bites served with a creamy Parmesan sauce. Perfect with mashed potatoes or cauliflower purรฉe for an indulgent yet elegant meal.


Ingredients

  • 500 g (1 lb) ground chicken
  • 1 egg
  • ยฝ cup breadcrumbs (panko preferred)
  • ยฝ cup Parmesan cheese, grated
  • 2 cloves garlic, minced
  • 1 Tbsp fresh parsley, chopped
  • 1 tsp onion powder
  • ยฝ tsp paprika
  • Salt and pepper, to taste
  • 2 Tbsp butter (for sauce)
  • 2 Tbsp flour (for sauce)
  • 1ยฝ cups milk (or half-and-half for extra richness)
  • ยพ cup Parmesan, grated (for sauce)
  • ยฝ cup mozzarella, shredded (for sauce)
  • Salt, pepper, and a pinch of nutmeg (for sauce)
  • Mashed potatoes or cauliflower purรฉe (for serving)
  • Fresh thyme or parsley (for garnish)


Instructions

  1. Preheat oven to 375ยฐF (190ยฐC) and line a baking sheet with parchment paper.
  2. In a large bowl, combine ground chicken, egg, breadcrumbs, Parmesan, garlic, parsley, onion powder, paprika, salt, and pepper. Mix until just combined.
  3. Form mixture into small balls (about 1ยฝ inches each) and place on the prepared baking sheet.
  4. Bake for 18โ€“20 minutes until cooked through and lightly golden.
  5. Meanwhile, prepare the creamy Parmesan sauce: melt butter in a saucepan over medium heat, whisk in flour, cook 1 minute, then slowly add milk while whisking until smooth and thickened.
  6. Add grated Parmesan, shredded mozzarella, salt, pepper, and nutmeg. Stir until cheese is melted and sauce is creamy.
  7. Serve chicken bombs over mashed potatoes or cauliflower purรฉe and drizzle with sauce.
  8. Garnish with fresh thyme or parsley before serving.
