Description

This Pepper Steak in a Crock Pot is a flavorful, tender beef dish with colorful bell peppers and a savory sauce. It’s an easy slow cooker recipe perfect for busy weeknights or family dinners.

Ingredients

  • 2 pounds beef sirloin, cut into 2-inch strips
  • 3/4 teaspoon garlic powder, or to taste
  • 3 tablespoons vegetable oil
  • 1 cube beef bouillon
  • 1/4 cup hot water
  • 1 tablespoon cornstarch
  • 1/2 cup chopped onion
  • 2 large green bell peppers, roughly chopped
  • 1 (14.5 ounce) can stewed tomatoes, with liquid
  • 3 tablespoons soy sauce
  • 1 teaspoon white sugar
  • 1 teaspoon salt

Instructions

  1. In a skillet, heat vegetable oil over medium-high heat and sear the beef strips until browned. Transfer to the slow cooker.
  2. Add chopped onion and green bell peppers to the slow cooker.
  3. In a small bowl, dissolve beef bouillon in hot water and mix with cornstarch, stewed tomatoes, soy sauce, sugar, salt, and garlic powder.
  4. Pour the sauce mixture over the beef and vegetables.
  5. Cover and cook on Low for 6โ€“7 hours or High for 3โ€“4 hours, until beef is tender.
  6. Stir gently before serving and serve warm with rice or noodles.

Notes

  • Adjust garlic and seasoning to taste.
  • For extra flavor, sear the beef in batches to get a nice crust before slow cooking.
