Queso Chicken Enchiladas are cheesy, flavorful, and perfect for a comforting dinner. Loaded with tender chicken, creamy queso, and a hint of spice, theyโ€™re a crowd favorite.


Ingredients

  • 2 1/2 cups cooked chicken, shredded
  • 2 tbsp green chilies, chopped
  • 10 oz tomatoes with green chilies
  • 1/2 packet taco seasoning
  • 5 burrito-size flour tortillas
  • 1 cup cheddar cheese, shredded
  • 1 lb Queso blanco Velveeta
  • 1 cup sour cream


Instructions

  1. Preheat oven to 350ยฐF (175ยฐC).
  2. Mix chicken, green chilies, tomatoes with green chilies, and taco seasoning in a bowl.
  3. Spoon mixture into tortillas, roll them up, and place seam-side down in a baking dish.
  4. Pour melted Queso blanco over enchiladas and sprinkle with cheddar cheese.
  5. Bake for 20-25 minutes until cheese is melted and bubbly.
  6. Serve hot with sour cream on top.

Notes

  • You can add chopped onions or cilantro for extra flavor.
