Ingredients
- 2 1/2 cups cooked chicken, shredded
- 2 tbsp green chilies, chopped
- 10 oz tomatoes with green chilies
- 1/2 packet taco seasoning
- 5 burrito-size flour tortillas
- 1 cup cheddar cheese, shredded
- 1 lb Queso blanco Velveeta
- 1 cup sour cream
Instructions
- Preheat oven to 350ยฐF (175ยฐC).
- Mix chicken, green chilies, tomatoes with green chilies, and taco seasoning in a bowl.
- Spoon mixture into tortillas, roll them up, and place seam-side down in a baking dish.
- Pour melted Queso blanco over enchiladas and sprinkle with cheddar cheese.
- Bake for 20-25 minutes until cheese is melted and bubbly.
- Serve hot with sour cream on top.
Notes
- You can add chopped onions or cilantro for extra flavor.
- Adjust the spice level by using mild or hot green chilies.
