Description

Cowboy Butter Garlic Chicken Tortellini with Fire-Roasted Red Peppers is a hearty and flavorful dish, combining tender chicken, cheesy tortellini, and smoky fire-roasted peppers in a buttery garlic sauce.


Ingredients

  • 2 1/2 cups cooked chicken, shredded
  • 2 tablespoons green chilies, diced
  • 10 ounces tomatoes with green chilies
  • 1/2 packet taco seasoning
  • 5 burrito-size flour tortillas
  • 1 cup shredded cheddar cheese
  • 1 pound queso blanco Velveeta
  • 1 cup sour cream


Instructions

  1. Cook tortellini according to package directions and drain.
  2. In a large skillet, melt cowboy butter over medium heat.
  3. Add chicken, green chilies, and fire-roasted tomatoes. Cook until heated through.
  4. Add cooked tortellini and queso blanco, stirring until cheese is melted and everything is coated in the buttery sauce.
  5. Top with shredded cheddar and bake at 350ยฐF for 10 minutes until bubbly.
  6. Serve hot with a dollop of sour cream.
