Description
A rich and creamy Queso Soup made with ground beef or sausage, cheese, and mild green chiles. Perfect for chilly evenings or game day!
Ingredients
- 1.5 pounds ground beef or sausage
- 1 cup onion, chopped
- 1 green bell pepper, chopped
- 1 tablespoon minced garlic
- 1 teaspoon each: onion powder, garlic powder, cumin
- 32 ounces beef or vegetable broth
- 8 ounces cream cheese, softened
- 3 (4-ounce) cans mild green chiles
- 2 cups shredded cheddar cheese
Instructions
- In a large pot, brown the ground beef or sausage over medium heat. Drain excess fat.
- Add chopped onion, bell pepper, and minced garlic. Cook until vegetables are softened.
- Stir in onion powder, garlic powder, and cumin.
- Add the broth and bring to a simmer.
- Mix in softened cream cheese until melted and smooth.
- Add the canned green chiles and shredded cheddar cheese. Stir until cheese is melted and the soup is creamy.
- Simmer for 5โ10 minutes, adjust seasoning with salt and pepper if needed.
- Serve hot, optionally garnished with chopped cilantro or extra shredded cheese.
Notes
- Use low-sodium broth to control salt content.
- Can substitute Velveeta for creamier texture if desired.
- Great served with tortilla chips or warm bread.
