Ingredients

  • 1.5 pounds ground beef or sausage
  • 1 cup onion, chopped
  • 1 green bell pepper, chopped
  • 1 tablespoon minced garlic
  • 1 teaspoon each: onion powder, garlic powder, cumin
  • 32 ounces beef or vegetable broth
  • 8 ounces cream cheese, softened
  • 3 (4-ounce) cans mild green chiles
  • 2 cups shredded cheddar cheese


Instructions

  1. In a large pot, brown the ground beef or sausage over medium heat. Drain excess fat.
  2. Add chopped onion, bell pepper, and minced garlic. Cook until vegetables are softened.
  3. Stir in onion powder, garlic powder, and cumin.
  4. Add the broth and bring to a simmer.
  5. Mix in softened cream cheese until melted and smooth.
  6. Add the canned green chiles and shredded cheddar cheese. Stir until cheese is melted and the soup is creamy.
  7. Simmer for 5โ€“10 minutes, adjust seasoning with salt and pepper if needed.
  8. Serve hot, optionally garnished with chopped cilantro or extra shredded cheese.
