Ingredients

  • 1 pound boneless, skinless chicken breast or thighs
  • 2 medium sweet potatoes, peeled and diced
  • 1 cup cooked white or brown rice
  • 2 tablespoons olive oil
  • 1 teaspoon paprika
  • 1 teaspoon garlic powder
  • Salt and pepper to taste
  • 2 tablespoons fresh parsley, chopped (optional garnish)
  • Creamy Garlic Sauce:
  • ยฝ cup plain yogurt or sour cream
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil
  • 1 teaspoon lemon juice
  • Salt and pepper to taste


Instructions

  1. Preheat oven to 400ยฐF (200ยฐC). Toss sweet potatoes with 1 tbsp olive oil, salt, and pepper, and roast for 20โ€“25 minutes until tender.
  2. Season chicken with paprika, garlic powder, salt, and pepper. Roast in the oven for 20โ€“25 minutes until fully cooked and golden brown.
  3. Prepare the creamy garlic sauce by mixing yogurt or sour cream with minced garlic, olive oil, lemon juice, salt, and pepper until smooth.
  4. Assemble bowls: layer rice, roasted sweet potatoes, and sliced chicken. Drizzle with creamy garlic sauce and garnish with fresh parsley.
