Ingredients
- 1 pound boneless, skinless chicken breast or thighs
- 2 medium sweet potatoes, peeled and diced
- 1 cup cooked white or brown rice
- 2 tablespoons olive oil
- 1 teaspoon paprika
- 1 teaspoon garlic powder
- Salt and pepper to taste
- 2 tablespoons fresh parsley, chopped (optional garnish)
- Creamy Garlic Sauce:
- ยฝ cup plain yogurt or sour cream
- 2 cloves garlic, minced
- 1 tablespoon olive oil
- 1 teaspoon lemon juice
- Salt and pepper to taste
Instructions
- Preheat oven to 400ยฐF (200ยฐC). Toss sweet potatoes with 1 tbsp olive oil, salt, and pepper, and roast for 20โ25 minutes until tender.
- Season chicken with paprika, garlic powder, salt, and pepper. Roast in the oven for 20โ25 minutes until fully cooked and golden brown.
- Prepare the creamy garlic sauce by mixing yogurt or sour cream with minced garlic, olive oil, lemon juice, salt, and pepper until smooth.
- Assemble bowls: layer rice, roasted sweet potatoes, and sliced chicken. Drizzle with creamy garlic sauce and garnish with fresh parsley.
