Description

These Roasted Red Pepper, Spinach, and Mozzarella Stuffed Chicken breasts are tender, flavorful, and cheesy. Perfect for a family dinner or special occasion, theyโ€™re packed with healthy veggies and melted mozzarella inside each chicken breast.


Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 cup roasted red peppers, chopped
  • 1 cup fresh spinach, chopped
  • 1 cup mozzarella cheese, shredded
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • Salt and pepper to taste
  • 1/4 cup grated Parmesan cheese
  • 1 tablespoon balsamic vinegar (optional)
  • Toothpicks or kitchen twine for securing chicken


Instructions

  1. Preheat oven to 375ยฐF (190ยฐC).
  2. Slice a pocket into each chicken breast without cutting all the way through.
  3. Mix roasted red peppers, spinach, and mozzarella in a bowl.
  4. Stuff each chicken breast with the mixture and secure with toothpicks or kitchen twine.
  5. Heat olive oil in an oven-safe skillet over medium heat, and sear chicken 2โ€“3 minutes per side until golden.
  6. Sprinkle with garlic, oregano, basil, salt, and pepper.
  7. Transfer skillet to oven and bake for 20โ€“25 minutes, until chicken is cooked through.
  8. Optionally, drizzle with balsamic vinegar and sprinkle with Parmesan before serving.

Notes

  • You can substitute mozzarella with provolone or fontina for a different flavor.
