These Roasted Red Pepper, Spinach, and Mozzarella Stuffed Chicken breasts are tender, flavorful, and cheesy. Perfect for a family dinner or special occasion, theyโre packed with healthy veggies and melted mozzarella inside each chicken breast.
Ingredients
- 4 boneless, skinless chicken breasts
- 1 cup roasted red peppers, chopped
- 1 cup fresh spinach, chopped
- 1 cup mozzarella cheese, shredded
- 2 tablespoons olive oil
- 2 cloves garlic, minced
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- Salt and pepper to taste
- 1/4 cup grated Parmesan cheese
- 1 tablespoon balsamic vinegar (optional)
- Toothpicks or kitchen twine for securing chicken
Instructions
- Preheat oven to 375ยฐF (190ยฐC).
- Slice a pocket into each chicken breast without cutting all the way through.
- Mix roasted red peppers, spinach, and mozzarella in a bowl.
- Stuff each chicken breast with the mixture and secure with toothpicks or kitchen twine.
- Heat olive oil in an oven-safe skillet over medium heat, and sear chicken 2โ3 minutes per side until golden.
- Sprinkle with garlic, oregano, basil, salt, and pepper.
- Transfer skillet to oven and bake for 20โ25 minutes, until chicken is cooked through.
- Optionally, drizzle with balsamic vinegar and sprinkle with Parmesan before serving.
Notes
- You can substitute mozzarella with provolone or fontina for a different flavor.
- Serve with roasted vegetables or a fresh salad for a complete meal.
- Make sure not to overstuff the chicken to avoid breaking the breast.
