Description

This Roasted Tomato and Garlic Ricotta Pasta is a simple, comforting dish made with sweet roasted cherry tomatoes, creamy ricotta, fresh basil, and Parmesan. Itโ€™s easy to prepare and perfect for a quick weeknight dinner.


Ingredients

  • 2 cups cherry tomatoes
  • 1 tablespoon olive oil
  • 4 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 12 ounces pasta (such as spaghetti or penne)
  • 1 cup ricotta cheese
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup fresh basil leaves, chopped
  • 1 tablespoon lemon juice


Instructions

  1. Preheat oven to 400ยฐF (200ยฐC).
  2. On a baking sheet, toss cherry tomatoes with olive oil, garlic, oregano, salt, and pepper.
  3. Roast for 20โ€“25 minutes until tomatoes are soft and slightly caramelized.
  4. Meanwhile, cook pasta according to package instructions. Drain and set aside.
  5. In a large bowl, combine hot pasta, roasted tomatoes, ricotta, Parmesan, basil, and lemon juice.
  6. Toss gently until creamy and well combined. Serve warm.

Notes

  • Add red pepper flakes for a spicy kick.
  • Use whole wheat or gluten-free pasta if preferred.
  • Reserve a little pasta water to adjust creaminess if needed.
