Ingredients
- 2 cups cherry tomatoes
- 1 tablespoon olive oil
- 4 cloves garlic, minced
- 1 teaspoon dried oregano
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 12 ounces pasta (such as spaghetti or penne)
- 1 cup ricotta cheese
- 1/2 cup grated Parmesan cheese
- 1/4 cup fresh basil leaves, chopped
- 1 tablespoon lemon juice
Instructions
- Preheat oven to 400ยฐF (200ยฐC).
- On a baking sheet, toss cherry tomatoes with olive oil, garlic, oregano, salt, and pepper.
- Roast for 20โ25 minutes until tomatoes are soft and slightly caramelized.
- Meanwhile, cook pasta according to package instructions. Drain and set aside.
- In a large bowl, combine hot pasta, roasted tomatoes, ricotta, Parmesan, basil, and lemon juice.
- Toss gently until creamy and well combined. Serve warm.
Notes
- Add red pepper flakes for a spicy kick.
- Use whole wheat or gluten-free pasta if preferred.
- Reserve a little pasta water to adjust creaminess if needed.
