Ingredients
- 12 oz pasta (penne or rotini)
- 1 lb ground beef or turkey
- 1 can (10 oz) Rotel diced tomatoes and green chilies (undrained)
- 1 cup heavy cream
- 1 cup shredded cheddar cheese
- 1 tsp taco seasoning
- ยฝ tsp garlic powder
- Salt and pepper, to taste
- Fresh cilantro or parsley (optional, for garnish)
Instructions
- Cook pasta according to package directions. Drain and set aside.
- In a large skillet, brown the ground beef or turkey over medium heat. Drain excess fat.
- Add Rotel tomatoes, taco seasoning, garlic powder, salt, and pepper. Stir to combine.
- Pour in heavy cream and bring to a gentle simmer.
- Add shredded cheddar cheese and stir until melted into a creamy sauce.
- Fold in the cooked pasta until fully coated.
- Garnish with cilantro or parsley and serve warm.
