Description

Rotel Pasta Fiesta is a quick and flavorful pasta dish featuring ground beef or turkey, Rotel diced tomatoes with green chilies, creamy cheese, and a touch of taco seasoning. Perfect for a fun family dinner.


Ingredients

  • 1 lb Ground beef or turkey
  • 1/2 tsp Garlic powder
  • 1 can Rotel diced tomatoes and green chilies
  • 12 oz Pasta (penne, rotini, or elbow)
  • Salt and pepper to taste
  • 1 tsp Taco seasoning
  • 1 cup Cheddar cheese
  • 1 cup Heavy cream
  • Fresh cilantro or parsley for garnish


Instructions

  1. Cook pasta according to package directions; drain and set aside.
  2. In a large skillet, cook ground beef or turkey with garlic powder until browned. Drain excess fat.
  3. Add Rotel tomatoes and green chilies, taco seasoning, salt, and pepper. Simmer 5 minutes.
  4. Stir in heavy cream and cooked pasta. Mix until well combined.
  5. Sprinkle cheddar cheese on top and cook until melted.
  6. Garnish with fresh cilantro or parsley and serve warm.

Notes

  • Use your preferred type of pasta; whole wheat or gluten-free works as well.
  • For a spicier version, use Rotel with extra hot green chilies.
