Ingredients
- 2 large boneless/skinless chicken breasts (about 1ยพ lbs)
- 1 oz packet taco seasoning
- 2 tbsp olive oil
- 8 oz cream cheese, room temperature
- 16 oz refried beans
- 16 oz salsa (about 2 cups)
- ยพ cup cheddar cheese, shredded
- ยพ cup Monterey Jack cheese, shredded
- Fresh parsley or cilantro, to garnish
Instructions
- Preheat oven to 375ยฐF (190ยฐC).
- Rub chicken breasts with taco seasoning.
- Heat olive oil in a skillet over medium heat and sear chicken for 2โ3 minutes per side until lightly browned. Remove from heat.
- In a mixing bowl, combine cream cheese, refried beans, and salsa until smooth.
- Place seared chicken in a baking dish and pour the cream cheese mixture over the top.
- Sprinkle cheddar and Monterey Jack cheese evenly over the chicken and mixture.
- Bake for 25โ30 minutes until chicken is fully cooked (internal temperature 165ยฐF / 74ยฐC) and cheese is melted and bubbly.
- Garnish with fresh parsley or cilantro and serve warm.
