Ingredients

  • 2 large boneless/skinless chicken breasts (about 1ยพ lbs)
  • 1 oz packet taco seasoning
  • 2 tbsp olive oil
  • 8 oz cream cheese, room temperature
  • 16 oz refried beans
  • 16 oz salsa (about 2 cups)
  • ยพ cup cheddar cheese, shredded
  • ยพ cup Monterey Jack cheese, shredded
  • Fresh parsley or cilantro, to garnish


Instructions

  1. Preheat oven to 375ยฐF (190ยฐC).
  2. Rub chicken breasts with taco seasoning.
  3. Heat olive oil in a skillet over medium heat and sear chicken for 2โ€“3 minutes per side until lightly browned. Remove from heat.
  4. In a mixing bowl, combine cream cheese, refried beans, and salsa until smooth.
  5. Place seared chicken in a baking dish and pour the cream cheese mixture over the top.
  6. Sprinkle cheddar and Monterey Jack cheese evenly over the chicken and mixture.
  7. Bake for 25โ€“30 minutes until chicken is fully cooked (internal temperature 165ยฐF / 74ยฐC) and cheese is melted and bubbly.
  8. Garnish with fresh parsley or cilantro and serve warm.
