Description

These Savory Breakfast Pop-Tarts are a fun and hearty twist on the classic pastry. Filled with creamy sausage gravy and scrambled eggs, and optionally topped with melted cheese and seasoning, these hand-held breakfast treats are perfect for a savory start to your day.


Ingredients

  • For the Sausage Gravy Filling:
    ยผ pound breakfast sausage
    2 tablespoons all-purpose flour
    1ยผ cups whole milk
    ยผ teaspoon seasoned salt
    ยฝ teaspoon black pepper
    ยฝ teaspoon minced fresh rosemary (optional)
    A pinch of dried sage (optional)
  • For the Egg Filling:
    5 large eggs, scrambled
    1 cup shredded cheddar or Jack cheese (optional topping)
    Your favorite seasoning blend (for sprinkling)
  • For the Pastry Dough:
    3 cups all-purpose flour
    1 teaspoon salt
    1 cup vegetable shortening
    ยฝ cup cold butter
    1 large egg
    1 tablespoon white vinegar
    5 tablespoons cold water
  • For Assembly:
    1 large egg + 2 tablespoons water (for egg wash)


Instructions

  1. Preheat oven to 375ยฐF (190ยฐC) and line a baking sheet with parchment paper.
  2. Prepare sausage gravy: In a skillet, cook breakfast sausage over medium heat until browned. Sprinkle flour over sausage and stir for 1 minute. Gradually add milk, stirring constantly, until thickened. Season with salt, pepper, rosemary, and sage if using. Let cool slightly.
  3. Scramble eggs until cooked through and set aside.
  4. Prepare pastry dough: In a large bowl, combine flour and salt. Cut in shortening and cold butter until mixture resembles coarse crumbs. Mix egg, vinegar, and cold water, then add to flour mixture. Knead gently until dough comes together. Chill 15 minutes.
  5. Roll out dough to 1/8-inch thickness. Cut into rectangles (about 3×4 inches).
  6. Place a spoonful of sausage gravy and some scrambled eggs on half of the rectangles. Sprinkle cheese if desired. Cover with remaining rectangles and seal edges with a fork.
  7. Mix egg and water to make egg wash. Brush over the tops of the pop-tarts.
  8. Bake for 20-25 minutes, until golden brown. Cool slightly before serving. Sprinkle with seasoning blend if desired.

Notes

  • Use a small amount of filling to prevent overflow during baking.
  • These pop-tarts can be made ahead and stored in the fridge for up to 3 days or frozen for longer storage.
