Ingredients

  • 2 large sweet potatoes (about 1ยฝ pounds)
  • ยฝ cup packed brown sugar
  • 1 tsp cinnamon
  • ยฝ tsp nutmeg
  • ยผ tsp salt
  • 1 tsp vanilla extract
  • 3 tbsp butter
  • 1 cup heavy cream
  • ยฝ cup mini marshmallows


Instructions

  1. Preheat your oven to 375ยฐF (190ยฐC). Grease a baking dish.
  2. Peel the sweet potatoes and slice them into thin rounds.
  3. In a saucepan, melt the butter over medium heat. Add brown sugar, cinnamon, nutmeg, salt, and vanilla. Stir until smooth.
  4. Pour in the heavy cream and heat until warm, but do not boil.
  5. Layer the sweet potato slices in the baking dish. Pour the warm brown sugar cream mixture evenly over the top.
  6. Cover with foil and bake for 40 minutes.
  7. Uncover, sprinkle mini marshmallows on top, and bake for another 10 minutes until golden and bubbly.
