Ingredients
- 2 large sweet potatoes (about 1ยฝ pounds)
- ยฝ cup packed brown sugar
- 1 tsp cinnamon
- ยฝ tsp nutmeg
- ยผ tsp salt
- 1 tsp vanilla extract
- 3 tbsp butter
- 1 cup heavy cream
- ยฝ cup mini marshmallows
Instructions
- Preheat your oven to 375ยฐF (190ยฐC). Grease a baking dish.
- Peel the sweet potatoes and slice them into thin rounds.
- In a saucepan, melt the butter over medium heat. Add brown sugar, cinnamon, nutmeg, salt, and vanilla. Stir until smooth.
- Pour in the heavy cream and heat until warm, but do not boil.
- Layer the sweet potato slices in the baking dish. Pour the warm brown sugar cream mixture evenly over the top.
- Cover with foil and bake for 40 minutes.
- Uncover, sprinkle mini marshmallows on top, and bake for another 10 minutes until golden and bubbly.
- Let cool slightly and serve warm.
