Description

Ingredients

  • 1 pound lean ground beef or lamb
  • 2 tablespoons butter
  • 1 medium onion, chopped
  • 4 cloves garlic, minced
  • 1/2 teaspoon Italian seasoning
  • 2 tablespoons tomato paste
  • 4 cups chicken or beef broth
  • 1/2 tablespoon Worcestershire sauce
  • 1 cup heavy or whipping cream
  • 2 medium-to-large Russet potatoes, peeled and diced
  • 1/2 tablespoon cornstarch
  • 2 cups frozen mixed vegetables
  • Seasoning salt and pepper to taste


Instructions

  1. In a large pot or Dutch oven, melt butter over medium heat. Add chopped onion and garlic and sauté until softened, about 3–4 minutes.
  2. Add ground beef or lamb, breaking it apart with a spoon, and cook until browned.
  3. Stir in Italian seasoning and tomato paste; cook for 1–2 minutes to deepen the flavor.
  4. Add broth, Worcestershire sauce, diced potatoes, and frozen mixed vegetables. Bring to a boil, then reduce heat and simmer for 15–20 minutes until potatoes are tender.
  5. In a small bowl, mix cornstarch with a few tablespoons of cream to make a slurry. Stir into the soup along with the remaining cream to thicken slightly.
  6. Season with salt and pepper to taste. Simmer for an additional 5 minutes until heated through.
  7. Serve hot with crusty bread or garnish with fresh herbs if desired.
