Description

This Shrimp & Lobster Cheddar Bay Biscuit Pot Pie is creamy, cheesy, and full of luxurious seafood flavor. The buttery, golden cheddar bay biscuits on top make it a comforting and indulgent meal perfect for any occasion.


Ingredients

For the Filling:

  • 2 tablespoons unsalted butter
  • 2 garlic cloves, minced
  • 1 small onion, finely chopped
  • 1 stalk celery, diced
  • 2 tablespoons all-purpose flour
  • 1 ½ cups seafood stock (or chicken stock)
  • ½ cup heavy cream
  • 1 teaspoon Old Bay seasoning
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • ½ pound shrimp, peeled and deveined
  • ½ pound cooked lobster meat, chopped
  • 1 tablespoon chopped fresh parsley

For the Cheddar Bay Biscuit Topping:

  • 1 cup all-purpose flour
  • 1 teaspoon baking powder
  • ½ teaspoon garlic powder
  • ¼ teaspoon salt
  • 2 tablespoons cold butter, grated
  • ½ cup shredded sharp cheddar cheese
  • ⅓ cup whole milk (plus 1 tablespoon if needed)
  • 1 tablespoon chopped fresh chives or parsley (optional)


Instructions

  1. Preheat oven to 400°F (200°C).
  2. In a skillet, melt butter over medium heat. Add garlic, onion, and celery; sauté until softened, 3–4 minutes.
  3. Stir in flour and cook for 1 minute.
  4. Gradually whisk in seafood stock and heavy cream. Bring to a simmer until slightly thickened.
  5. Season with Old Bay, salt, and pepper. Stir in shrimp, lobster, and parsley. Remove from heat.
  6. Prepare the Cheddar Bay Biscuit topping: In a bowl, mix flour, baking powder, garlic powder, and salt. Cut in butter until mixture resembles coarse crumbs.
  7. Stir in cheddar cheese and milk until dough forms (add extra milk if needed). Fold in chives or parsley if using.
  8. Pour seafood filling into a greased baking dish. Drop biscuit dough evenly over the top.
  9. Bake 18–22 minutes or until biscuits are golden and cooked through. Serve warm.

Notes

  • For extra flavor, sprinkle a little extra cheddar on top before baking.
  • Substitute frozen shrimp if fresh is unavailable, do not thaw completely.
  • This dish reheats well and can be made ahead and baked before serving.
