Description

Shrimp Scampi Pasta Bake combines succulent shrimp with a creamy garlic lemon sauce, penne pasta, and Parmesan cheese, baked to perfection. Itโ€™s a delicious weeknight dinner or impressive dish for guests, ready in under 45 minutes.


Ingredients

  • 1 lb medium shrimp, peeled and deveined
  • 8 oz penne pasta
  • 4 cloves garlic, minced
  • 4 tbsp unsalted butter
  • 1/4 cup freshly squeezed lemon juice
  • 1 cup heavy cream
  • 1 cup grated Parmesan cheese
  • 1/4 cup fresh parsley, chopped
  • Salt and pepper to taste


Instructions

  1. Preheat oven to 375ยฐF (190ยฐC). Cook penne pasta according to package directions until al dente. Drain and set aside.
  2. In a large skillet, melt butter over medium heat. Add garlic and sautรฉ until fragrant (1โ€“2 minutes).
  3. Add shrimp and cook until pink and opaque, about 2โ€“3 minutes per side. Remove shrimp from skillet and set aside.
  4. Stir in heavy cream, lemon juice, and half of the Parmesan cheese. Season with salt and pepper.
  5. Add cooked pasta and shrimp to the sauce and mix until combined.
  6. Transfer mixture to a baking dish. Sprinkle remaining Parmesan cheese on top and bake for 15 minutes until bubbly and golden.
  7. Garnish with chopped parsley before serving.

Notes

  • Substitute penne with rigatoni or ziti if desired.
  • Add a pinch of red pepper flakes for a spicy kick.
