Description
Shrimp Scampi Pasta Bake combines succulent shrimp with a creamy garlic lemon sauce, penne pasta, and Parmesan cheese, baked to perfection. Itโs a delicious weeknight dinner or impressive dish for guests, ready in under 45 minutes.
Ingredients
- 1 lb medium shrimp, peeled and deveined
- 8 oz penne pasta
- 4 cloves garlic, minced
- 4 tbsp unsalted butter
- 1/4 cup freshly squeezed lemon juice
- 1 cup heavy cream
- 1 cup grated Parmesan cheese
- 1/4 cup fresh parsley, chopped
- Salt and pepper to taste
Instructions
- Preheat oven to 375ยฐF (190ยฐC). Cook penne pasta according to package directions until al dente. Drain and set aside.
- In a large skillet, melt butter over medium heat. Add garlic and sautรฉ until fragrant (1โ2 minutes).
- Add shrimp and cook until pink and opaque, about 2โ3 minutes per side. Remove shrimp from skillet and set aside.
- Stir in heavy cream, lemon juice, and half of the Parmesan cheese. Season with salt and pepper.
- Add cooked pasta and shrimp to the sauce and mix until combined.
- Transfer mixture to a baking dish. Sprinkle remaining Parmesan cheese on top and bake for 15 minutes until bubbly and golden.
- Garnish with chopped parsley before serving.
Notes
- Substitute penne with rigatoni or ziti if desired.
- Add a pinch of red pepper flakes for a spicy kick.
- Leftovers store well in the fridge for 2โ3 days and reheat nicely.
