Ingredients
- 2 boneless, skinless chicken breasts
- 1 cup uncooked brown rice
- 1 can (15 oz) black beans, drained and rinsed
- 1 can (15 oz) corn, drained
- 2 cups chicken broth
- 1 cup salsa
- 1 teaspoon chili powder
- 1 teaspoon cumin
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon paprika

- 1 cup shredded cheddar cheese (optional)

Instructions
- Place chicken breasts in the slow cooker.
- Add uncooked brown rice, black beans, corn, chicken broth, salsa, and spices. Stir to combine.
- Cover and cook on low for 6โ7 hours or high for 3โ4 hours, until chicken is cooked and rice is tender.
- Shred chicken with two forks and stir to mix well.
- Serve in bowls, topped with shredded cheddar cheese, fresh cilantro, and lime wedges.
