Description

This Sour Cream Beef Noodle Casserole is a creamy, comforting dish combining ground beef, tender egg noodles, tomato sauce, and a rich blend of sour cream, cottage cheese, and cheddar cheese. Perfect for family dinners or meal prep.


Ingredients

  • 1 lb lean ground beef
  • ยฝ yellow onion, chopped
  • 2 cloves garlic, minced
  • 2 15 oz cans tomato sauce
  • 1 tsp Italian seasoning
  • 8 oz egg noodles
  • 1 cup sour cream
  • 1 cup cottage cheese
  • 1 cup grated cheddar cheese
  • Kosher salt and freshly ground black pepper to taste


Instructions

  1. Preheat oven to 350ยฐF (175ยฐC). Grease a 9×13-inch baking dish.
  2. Cook egg noodles according to package instructions, drain and set aside.
  3. In a large skillet, brown ground beef over medium heat. Add chopped onion and garlic, cook until onions are translucent.
  4. Add tomato sauce, Italian seasoning, salt, and pepper. Simmer for 5โ€“7 minutes.
  5. In a separate bowl, mix sour cream and cottage cheese until smooth.
  6. Combine cooked noodles with beef-tomato mixture, then fold in sour cream mixture.
  7. Transfer everything to the prepared baking dish, top with grated cheddar cheese.
  8. Bake for 20โ€“25 minutes until cheese is melted and bubbly. Let sit 5 minutes before serving.
