Description

Sour Cream Beef Noodle Casserole is a creamy, cheesy, and comforting dish with tender ground beef, egg noodles, and a rich combination of sour cream, cottage cheese, and cheddar—perfect for family dinners.


Ingredients

  • 1 lb lean ground beef
  • ½ yellow onion, chopped
  • 2 cloves garlic, minced
  • 2 (15 oz) cans tomato sauce
  • 1 teaspoon Italian seasoning
  • 8 oz egg noodles
  • 1 cup sour cream
  • 1 cup cottage cheese
  • 1 cup shredded cheddar cheese
  • Kosher salt and freshly ground black pepper to taste


Instructions

  1. Preheat oven to 350°F (175°C).
  2. Cook egg noodles according to package directions; drain and set aside.
  3. In a large skillet, brown ground beef with onions and garlic until beef is fully cooked. Drain excess fat.
  4. Add tomato sauce and Italian seasoning to the beef mixture. Season with salt and pepper. Simmer 5 minutes.
  5. In a large bowl, combine cooked noodles, beef mixture, sour cream, cottage cheese, and half of the shredded cheddar cheese. Mix until well combined.
  6. Transfer mixture to a greased 9×13-inch baking dish. Top with remaining cheddar cheese.
  7. Bake for 20-25 minutes until cheese is melted and bubbly. Serve warm.

Notes

  • Use whole wheat noodles for a healthier version.
  • Add a pinch of crushed red pepper for a little heat.
  • Leftovers can be refrigerated for 2-3 days and reheated.
