Description

Southern Breakfast Enchiladas with Sausage Gravy are a hearty and comforting breakfast dish. Flour tortillas are stuffed with scrambled eggs, hash browns, sausage, and cheddar cheese, then topped with creamy sausage gravy for a delicious start to the day.


Ingredients

  • 8 flour tortillas
  • 1 lb pork sausage, cooked and crumbled
  • 1 cup shredded cheddar cheese
  • 6 eggs, scrambled
  • 2 cups hash browns, cooked
  • 2 tbsp butter
  • 2 tbsp flour
  • 2 cups milk
  • Salt and pepper to taste


Instructions

  1. Preheat oven to 375ยฐF (190ยฐC) and grease a baking dish.
  2. In a skillet, cook pork sausage until browned. Remove and set aside.
  3. In the same skillet, melt butter and whisk in flour to make a roux. Gradually add milk, stirring until thickened to create sausage gravy. Season with salt and pepper.
  4. Lay out tortillas and fill each with scrambled eggs, hash browns, cooked sausage, and shredded cheddar. Roll up and place in the baking dish.
  5. Pour sausage gravy over the enchiladas.
  6. Bake for 15โ€“20 minutes until heated through and cheese is melted.
  7. Serve warm.
