Southern Breakfast Enchiladas with Sausage Gravy are a hearty and comforting breakfast dish. Flour tortillas are stuffed with scrambled eggs, hash browns, sausage, and cheddar cheese, then topped with creamy sausage gravy for a delicious start to the day.
Ingredients
- 8 flour tortillas
- 1 lb pork sausage, cooked and crumbled
- 1 cup shredded cheddar cheese
- 6 eggs, scrambled
- 2 cups hash browns, cooked
- 2 tbsp butter
- 2 tbsp flour
- 2 cups milk
- Salt and pepper to taste
Instructions
- Preheat oven to 375ยฐF (190ยฐC) and grease a baking dish.
- In a skillet, cook pork sausage until browned. Remove and set aside.
- In the same skillet, melt butter and whisk in flour to make a roux. Gradually add milk, stirring until thickened to create sausage gravy. Season with salt and pepper.
- Lay out tortillas and fill each with scrambled eggs, hash browns, cooked sausage, and shredded cheddar. Roll up and place in the baking dish.
- Pour sausage gravy over the enchiladas.
- Bake for 15โ20 minutes until heated through and cheese is melted.
- Serve warm.
Notes
- Optional: top with green onions or hot sauce for extra flavor.
- Can be prepared ahead and baked in the morning for a quick breakfast.
