These Steak Bites with Sweet Potatoes and Peppers are a flavorful, hearty, and colorful dish perfect for a quick weeknight dinner or a satisfying meal any time.
Ingredients
- 1 lb steak (sirloin or tenderloin), cut into bite-sized pieces
- 2 medium sweet potatoes, diced
- 1 bell pepper (red or yellow), sliced
- 1 bell pepper (green), sliced
- 3 tablespoons olive oil
- 2 teaspoons garlic powder
- 1 teaspoon onion powder
- 1 teaspoon smoked paprika
- Salt and pepper, to taste
- Fresh parsley, chopped (for garnish)
Instructions
- Preheat oven to 400ยฐF (200ยฐC).
- Toss diced sweet potatoes and sliced bell peppers with 1 tablespoon olive oil, salt, pepper, and half of the spices.
- Spread vegetables on a baking sheet and roast for 20 minutes.
- Meanwhile, season steak bites with remaining olive oil, garlic powder, onion powder, smoked paprika, salt, and pepper.
- After vegetables have roasted for 20 minutes, add steak bites to the baking sheet and roast an additional 10โ12 minutes until steak is cooked to desired doneness and vegetables are tender.
- Garnish with fresh chopped parsley and serve warm.
Notes
- Use any preferred cut of steak; tenderloin or sirloin works best for quick cooking.
- Optional: add a splash of balsamic glaze for extra flavor before serving.
- Can be prepared on the stovetop in a large skillet if preferred.
