Ingredients

  • 2 chicken breasts, grilled and sliced
  • 1 cup cooked rice (white or brown)
  • 2 cups corn kernels (fresh or frozen)
  • 1 tablespoon butter
  • 1 tablespoon mayonnaise
  • 1 tablespoon sour cream
  • 1 teaspoon chili powder
  • 1 teaspoon smoked paprika
  • 1 lime, juiced
  • 1/4 cup cilantro, chopped
  • 1/4 cup cotija cheese, crumbled
  • Salt and pepper, to taste
  • 1 tablespoon olive oil (for grilling chicken)


Instructions

  1. Grill chicken breasts with olive oil, salt, and pepper until cooked through, then slice.
  2. In a skillet, heat butter and sautรฉ corn with chili powder and smoked paprika until slightly charred. Remove from heat and stir in mayonnaise, sour cream, and lime juice.
  3. Place cooked rice in bowls, top with grilled chicken and the street corn mixture.
  4. Sprinkle with chopped cilantro and cotija cheese.
  5. Serve immediately and enjoy.
