These Super Tender Crockpot Beef Short Ribs are slow-cooked to perfection with rich, savory flavors. The ribs become fall-off-the-bone tender in a deep, flavorful sauce, perfect for cozy dinners or special occasions.
Ingredients
- 4 to 5 lbs beef short ribs
- Salt and freshly ground black pepper, to taste
- 2 tablespoons olive oil
- 1 large onion, sliced
- 4 cloves garlic, minced
- 1 cup beef broth
- 1/2 cup red wine (optional)
- 1/4 cup soy sauce
- 1/4 cup Worcestershire sauce
- 2 tablespoons tomato paste
- 2 tablespoons brown sugar
- 2 teaspoons smoked paprika
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- 2 bay leaves
Instructions
- Season the beef short ribs generously with salt and black pepper.
- Heat olive oil in a large skillet over medium-high heat and brown the ribs on all sides. Transfer to the slow cooker.
- In the same skillet, sautรฉ the sliced onion and garlic until fragrant, then add to the slow cooker.
- Whisk together beef broth, red wine (if using), soy sauce, Worcestershire sauce, tomato paste, brown sugar, smoked paprika, thyme, and rosemary, then pour over the ribs.
- Add bay leaves, cover, and cook on Low for 8 hours or High for 4โ5 hours, until ribs are tender and falling off the bone.
- Remove bay leaves, taste, and adjust seasoning if needed. Serve warm with the sauce spooned over the ribs.
Notes
- For extra flavor, sear the ribs in batches to get a deep brown crust before slow cooking.
- Serve with mashed potatoes or creamy polenta to soak up the sauce.
- Leftovers reheat beautifully and develop even more flavor overnight.
