Ingredients

  • 4 to 5 lbs beef short ribs
  • Salt and freshly ground black pepper, to taste
  • 2 tablespoons olive oil
  • 1 large onion, sliced
  • 4 cloves garlic, minced
  • 1 cup beef broth
  • 1/2 cup red wine (optional)
  • 1/4 cup soy sauce
  • 1/4 cup Worcestershire sauce
  • 2 tablespoons tomato paste
  • 2 tablespoons brown sugar
  • 2 teaspoons smoked paprika
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 2 bay leaves


Instructions

  1. Season the beef short ribs generously with salt and black pepper.
  2. Heat olive oil in a large skillet over medium-high heat and brown the ribs on all sides. Transfer to the slow cooker.
  3. In the same skillet, sautรฉ the sliced onion and garlic until fragrant, then add to the slow cooker.
  4. Whisk together beef broth, red wine (if using), soy sauce, Worcestershire sauce, tomato paste, brown sugar, smoked paprika, thyme, and rosemary, then pour over the ribs.
  5. Add bay leaves, cover, and cook on Low for 8 hours or High for 4โ€“5 hours, until ribs are tender and falling off the bone.
  6. Remove bay leaves, taste, and adjust seasoning if needed. Serve warm with the sauce spooned over the ribs.
