Ingredients
- 4 boneless skinless chicken thighs
- ½ cup sweet chili sauce
- 1 tablespoon soy sauce
- 1 tablespoon olive oil
- 1 cup jasmine rice
- 1 cup coconut milk
- 2 tablespoons fresh lime juice
- 1 cup diced fresh tomatoes
- ¼ cup chopped green onions or chives
- Salt and pepper to taste
- Optional: sesame seeds, lime wedges
Instructions
- Cook jasmine rice according to package instructions.
- In a bowl, mix sweet chili sauce and soy sauce. Marinate chicken thighs for 10–15 minutes.
- Heat olive oil in a skillet over medium heat. Cook chicken 5–6 minutes per side until cooked through and caramelized.
- In a small saucepan, heat coconut milk and lime juice to create the coconut lime drizzle.
- Assemble bowls with rice, cooked chicken, diced tomatoes, and green onions. Drizzle with coconut lime sauce.
