Description
Sweet Hawaiian Crock Pot Chicken is an easy, flavorful meal featuring tender chicken cooked with pineapple, bell peppers, and a sweet-savory sauce. Perfect served over rice for a delicious weeknight dinner with minimal effort.
Ingredients
- 2 lbs boneless, skinless chicken breasts or thighs
- 1 can (8 oz) pineapple chunks
- 3 cloves garlic, minced
- 1/2 tsp ground ginger
- 1 red bell pepper, sliced
- 1/2 cup soy sauce
- 1 cup pineapple juice
- 1/2 cup brown sugar
- 1 tbsp cornstarch
- Salt and pepper, to taste
- Cooked rice, for serving
- Chopped green onions and sesame seeds for garnish
Instructions
- Place chicken in the slow cooker.
- Add pineapple chunks, garlic, ginger, red bell pepper, soy sauce, pineapple juice, and brown sugar. Stir gently to combine.
- Cover and cook on low for 4โ5 hours or high for 2โ3 hours, until chicken is cooked through and tender.
- Mix cornstarch with a little water to make a slurry and stir into the slow cooker to thicken the sauce. Cook an additional 10โ15 minutes.
- Season with salt and pepper to taste.
- Serve chicken and sauce over cooked rice and garnish with chopped green onions and sesame seeds.
Notes
- For extra flavor, add a splash of soy sauce or teriyaki sauce.
- Can substitute chicken with pork or tofu for variation.
- Leftovers store well in the fridge for 2โ3 days.
