Description

Sweet Hawaiian Crock Pot Chicken is an easy, flavorful meal featuring tender chicken cooked with pineapple, bell peppers, and a sweet-savory sauce. Perfect served over rice for a delicious weeknight dinner with minimal effort.


Ingredients

  • 2 lbs boneless, skinless chicken breasts or thighs
  • 1 can (8 oz) pineapple chunks
  • 3 cloves garlic, minced
  • 1/2 tsp ground ginger
  • 1 red bell pepper, sliced
  • 1/2 cup soy sauce
  • 1 cup pineapple juice
  • 1/2 cup brown sugar
  • 1 tbsp cornstarch
  • Salt and pepper, to taste
  • Cooked rice, for serving
  • Chopped green onions and sesame seeds for garnish


Instructions

  1. Place chicken in the slow cooker.
  2. Add pineapple chunks, garlic, ginger, red bell pepper, soy sauce, pineapple juice, and brown sugar. Stir gently to combine.
  3. Cover and cook on low for 4โ€“5 hours or high for 2โ€“3 hours, until chicken is cooked through and tender.
  4. Mix cornstarch with a little water to make a slurry and stir into the slow cooker to thicken the sauce. Cook an additional 10โ€“15 minutes.
  5. Season with salt and pepper to taste.
  6. Serve chicken and sauce over cooked rice and garnish with chopped green onions and sesame seeds.

  • For extra flavor, add a splash of soy sauce or teriyaki sauce.
