Description

Ingredients
- 1 lb Ground turkey
- 2 cloves Garlic, minced
- 1 medium Onion, diced
- 1/4 cup fresh Parsley or cilantro, chopped
- 1 Red bell pepper, diced
- 2 large Sweet potatoes, peeled and cubed
- 1/2 tsp Thyme, dried
- 1 tsp Paprika, smoked
- Salt and pepper, to taste
- 1 tbsp Olive oil
- 1/2 tsp Cumin, ground
- 1 cup Mozzarella or cheddar cheese, shredded
Instructions
- Preheat oven to 400°F (200°C) and grease a baking dish.
- In a skillet, heat olive oil over medium heat. Add onion and garlic, sauté for 2–3 minutes until fragrant.
- Add ground turkey, paprika, cumin, thyme, salt, and pepper. Cook until turkey is browned.
- Add sweet potatoes and red bell pepper, stirring to combine.
- Transfer mixture to the baking dish, sprinkle cheese on top.
- Bake for 25–30 minutes, or until sweet potatoes are tender and cheese is melted.
- Garnish with fresh parsley or cilantro before serving.

- Use any cheese of your choice, like cheddar or mozzarella.
- Add extra vegetables like zucchini or carrots for more fiber.
