Ingredients
- 1 pound ground beef
- 1 medium onion, chopped
- 1 can (15 ounces) black beans, drained and rinsed
- 1 can (15 ounces) diced tomatoes with green chilies
- 1 tablespoon chili powder
- 1 teaspoon cumin
- 1 teaspoon garlic powder
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 cup cornmeal
- 1 cup milk
- 1 large egg
- 1 cup shredded cheddar cheese
- 1/2 cup sliced black olives (optional)
- 1/4 cup chopped fresh cilantro (for garnish)
Instructions
- Preheat oven to 375ยฐF (190ยฐC). Grease a baking dish.
- In a large skillet, cook ground beef and onion over medium heat until browned. Drain excess fat.
- Stir in black beans, diced tomatoes with green chilies, chili powder, cumin, garlic powder, salt, and black pepper. Simmer for 5 minutes.
- Spread beef mixture evenly into the prepared baking dish.
- In a bowl, whisk together cornmeal, milk, and egg until smooth.
- Pour cornmeal mixture over the beef layer and spread evenly.
- Sprinkle shredded cheddar cheese on top.
- Bake for 25โ30 minutes, or until the topping is set and golden.
- Let rest for 5โ10 minutes before slicing. Garnish with cilantro and olives if desired.
Notes
- For extra heat, add diced jalapeรฑos or a pinch of cayenne pepper.
- You can substitute ground turkey for a lighter version.
- Serve with sour cream or salsa for added flavor.
