These Thai Chicken Wraps are packed with juicy chicken thighs, a creamy peanut sauce, and a crunchy Asian slaw. Inspired by Jimmy John’s, they’re fresh, flavorful, and perfect for a quick lunch or light dinner. The wraps are customizable with low-carb or gluten-free options.
Ingredients
- For the Chicken:
1 lb boneless skinless chicken thighs (or chicken breast for leaner option)
2 tablespoons soy sauce
1 tablespoon sesame oil
1 tablespoon lime juice
1 teaspoon garlic powder
1 teaspoon ground ginger
½ teaspoon chili flakes (optional) - For the Peanut Sauce:
⅓ cup creamy peanut butter
2 tablespoons soy sauce
1 tablespoon honey
1 tablespoon rice vinegar
1 teaspoon sesame oil
1 clove garlic, minced
1 teaspoon grated fresh ginger
1–2 tablespoons warm water to thin sauce - For the Asian Slaw:
2 cups shredded green cabbage
1 cup shredded red cabbage
1 cup julienned carrots
½ red bell pepper, thinly sliced
2 scallions, thinly sliced
¼ cup chopped cilantro
1 tablespoon lime juice
1 tablespoon rice vinegar
1 teaspoon sugar
Salt to taste - For Assembling the Wraps:
4 large flour tortillas or flatbreads (low-carb or gluten-free optional)
Extra cilantro and chopped peanuts for garnish (optional)
Instructions
- Marinate chicken thighs with soy sauce, sesame oil, lime juice, garlic powder, ground ginger, and chili flakes for at least 15 minutes.
- Cook chicken in a skillet over medium heat until fully cooked, then shred.
- In a bowl, whisk together peanut butter, soy sauce, honey, rice vinegar, sesame oil, garlic, and ginger. Add warm water to reach desired consistency.
- In a large bowl, toss green cabbage, red cabbage, carrots, bell pepper, scallions, cilantro, lime juice, rice vinegar, sugar, and salt to make the slaw.
- Warm tortillas, spread peanut sauce, add shredded chicken, top with slaw, and roll up tightly.
- Garnish with extra cilantro and chopped peanuts if desired, then serve.

- Chicken can be grilled, baked, or sautéed depending on preference.
- For milder flavor, reduce chili flakes and use mild peanut butter.
