Description
Taco Lasagna is the perfect layered Mexican-style comfort food! Loaded with seasoned beef, beans, corn, tomatoes, flour tortillas, and LOTS of melted cheese, this easy casserole is a family favorite and great for meal prep.
Ingredients
- 1 lb (450 g) ground beef
- 1 packet (1 oz / 28 g) taco seasoning mix
- 2/3 cup (160 ml) water
- 1 can (15 oz / 425 g) black beans, rinsed and drained
- 1 can (15 oz / 425 g) corn kernels, drained
- 1 can (10 oz / 283 g) diced tomatoes with green chilies, drained
- 2 cups (200 g) shredded cheddar cheese
- 2 cups (200 g) shredded Monterey Jack cheese
- 8โ10 medium flour tortillas (or corn tortillas)
- 1/2 cup (120 g) sour cream (plus extra for serving)
- 2 green onions, sliced (optional)
- Fresh cilantro, chopped (optional)
Instructions
- Preheat oven to 375ยฐF (190ยฐC). Grease a 9×13-inch baking dish.
- In a large skillet, cook the ground beef over medium heat until browned. Drain excess grease.
- Add taco seasoning and water. Simmer for 3โ4 minutes until thickened.
- Stir in black beans, corn, and diced tomatoes with green chilies.
- Begin layering: spread a thin layer of the beef mixture in the bottom of the dish, then top with tortillas, more beef mixture, a few spoonfuls of sour cream, and a generous layer of both cheeses.
- Repeat layers until ingredients are used up, finishing with cheese on top.
- Bake uncovered for 20โ25 minutes or until cheese is melted and bubbly.
- Let rest 10 minutes before slicing. Garnish with green onions, cilantro, or extra sour cream.
Notes
- Use corn tortillas for a gluten-free option.
- Add jalapeรฑos or hot sauce for extra heat.
- Swap beef for shredded chicken or turkey to lighten it up.
