Ingredients
- 1 lb beef sausage

- 3 tbsp butter

Instructions
- Preheat oven to 400ยฐF (200ยฐC). Arrange tater tots on a baking sheet and bake until golden and crispy, about 25โ30 minutes.
- In a skillet over medium heat, cook beef sausage until browned. Remove and set aside.
- In the same skillet, melt butter, then whisk in flour, cooking 1โ2 minutes to make a roux.
- Gradually add milk, whisking constantly until smooth and thickened. Season with salt, black pepper, garlic powder, and red pepper flakes.
- Layer baked tater tots in a large serving dish, top with cooked sausage, scrambled eggs, and shredded cheddar cheese.
- Pour the creamy sauce over the top and garnish with chopped green onions.
