Ingredients

  • 1 lb beef sausage
  • 1/2 tsp garlic powder
  • 2 green onions, chopped
  • 4 cups frozen tater tots
  • 4 large eggs, fried or scrambled
  • 1/4 cup all-purpose flour
  • 1/2 tsp black pepper
  • 1/4 tsp red pepper flakes
  • 1/2 tsp salt
  • 3 tbsp butter
  • 1/2 cup cheddar cheese, shredded
  • 2 cups milk


Instructions

  1. Preheat oven to 400ยฐF (200ยฐC). Arrange tater tots on a baking sheet and bake until golden and crispy, about 25โ€“30 minutes.
  2. In a skillet over medium heat, cook beef sausage until browned. Remove and set aside.
  3. In the same skillet, melt butter, then whisk in flour, cooking 1โ€“2 minutes to make a roux.
  4. Gradually add milk, whisking constantly until smooth and thickened. Season with salt, black pepper, garlic powder, and red pepper flakes.
  5. Layer baked tater tots in a large serving dish, top with cooked sausage, scrambled eggs, and shredded cheddar cheese.
  6. Pour the creamy sauce over the top and garnish with chopped green onions.
  7. Serve immediately for a warm, hearty breakfast bowl.
