Ingredients
- 2 medium sweet potatoes (about 1.1 pounds), peeled and diced
- 2 cloves garlic, minced
- 12 ounces short pasta (rigatoni, penne, or fusilli)
- 4.2 ounces goat cheese, crumbled
- 1/4 cup heavy cream
- 20 fresh sage leaves
- 2 tbsp olive oil, plus more for drizzling
- 1 tbsp unsalted butter
- Salt and freshly ground black pepper, to taste
- Optional garnish: 1 ounce grated parmesan cheese, crushed red pepper flakes
Instructions
- Preheat oven to 400ยฐF (200ยฐC). Toss diced sweet potatoes with 1 tbsp olive oil, salt, and pepper. Spread on a baking sheet and roast for 25โ30 minutes until tender.
- In a small skillet, heat butter and remaining olive oil over medium heat. Add sage leaves and sautรฉ until crispy. Remove and set aside for garnish.
- Cook pasta according to package instructions. Drain and reserve 1/2 cup pasta water.
- In a large bowl, combine roasted sweet potatoes, cooked pasta, goat cheese, heavy cream, and garlic. Stir gently until goat cheese melts and forms a creamy sauce. Add reserved pasta water if needed to thin the sauce.
- Season with salt and pepper to taste.
- Serve pasta garnished with crispy sage leaves, parmesan, and crushed red pepper flakes if desired.
