Ingredients

  • 2 medium sweet potatoes (about 1.1 pounds), peeled and diced
  • 2 cloves garlic, minced
  • 12 ounces short pasta (rigatoni, penne, or fusilli)
  • 4.2 ounces goat cheese, crumbled
  • 1/4 cup heavy cream
  • 20 fresh sage leaves
  • 2 tbsp olive oil, plus more for drizzling
  • 1 tbsp unsalted butter
  • Salt and freshly ground black pepper, to taste
  • Optional garnish: 1 ounce grated parmesan cheese, crushed red pepper flakes


Instructions

  1. Preheat oven to 400ยฐF (200ยฐC). Toss diced sweet potatoes with 1 tbsp olive oil, salt, and pepper. Spread on a baking sheet and roast for 25โ€“30 minutes until tender.
  2. In a small skillet, heat butter and remaining olive oil over medium heat. Add sage leaves and sautรฉ until crispy. Remove and set aside for garnish.
  3. Cook pasta according to package instructions. Drain and reserve 1/2 cup pasta water.
  4. In a large bowl, combine roasted sweet potatoes, cooked pasta, goat cheese, heavy cream, and garlic. Stir gently until goat cheese melts and forms a creamy sauce. Add reserved pasta water if needed to thin the sauce.
  5. Season with salt and pepper to taste.
  6. Serve pasta garnished with crispy sage leaves, parmesan, and crushed red pepper flakes if desired.
