Description

Walking Taco Casserole is a fun and flavorful family dinner made with seasoned ground beef, beans, tomatoes, crunchy Fritos, and melted Mexican-style cheese. Itโ€™s an easy fiesta-inspired casserole perfect for busy weeknights.


Ingredients

  • 1 pound ground beef
  • 1 small onion, chopped finely
  • 1 package taco seasoning
  • ยฝ cup water
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 can (10 oz) diced tomatoes with green chiles
  • ยฝ cup sour cream
  • 1 bag (9.25 oz) Fritos corn chips
  • 2 cups Mexican-style shredded cheese


Instructions

  1. Preheat oven to 350ยฐF (175ยฐC).
  2. In a large skillet over medium heat, cook ground beef and chopped onion until beef is browned. Drain excess fat.
  3. Add taco seasoning and water. Stir and simmer for 2โ€“3 minutes.
  4. Stir in black beans and diced tomatoes with green chiles. Mix well.
  5. Spread half of the Fritos in the bottom of a greased baking dish.
  6. Layer beef mixture evenly over chips.
  7. Spread sour cream over the beef layer.
  8. Top with remaining Fritos and shredded cheese.
  9. Bake uncovered for 15โ€“20 minutes, until cheese is melted and bubbly.
  10. Serve warm with optional toppings if desired.
