Ingredients
- 1 pound ground beef
- 1 small onion, chopped finely
- 1 package taco seasoning
- ยฝ cup water
- 1 can (15 oz) black beans, drained and rinsed
- 1 can (10 oz) diced tomatoes with green chiles
- ยฝ cup sour cream
- 1 bag (9.25 oz) Fritos corn chips
- 2 cups Mexican-style shredded cheese
Instructions
- Preheat oven to 350ยฐF (175ยฐC).
- In a large skillet over medium heat, cook ground beef and chopped onion until beef is browned. Drain excess fat.
- Add taco seasoning and water. Stir and simmer for 2โ3 minutes.
- Stir in black beans and diced tomatoes with green chiles. Mix well.
- Spread half of the Fritos in the bottom of a greased baking dish.
- Layer beef mixture evenly over chips.
- Spread sour cream over the beef layer.
- Top with remaining Fritos and shredded cheese.
- Bake uncovered for 15โ20 minutes, until cheese is melted and bubbly.
- Serve warm with optional toppings if desired.
