Witch Cauldron Brownie Bites are rich, fudgy brownies topped with a creamy cream cheese frosting dyed fun Halloween colors. Decorated with candy eyeballs and sprinkles, they’re perfect for a spooky, festive treat that’s fun for parties and Halloween gatherings.
Ingredients
- 12 Tablespoons unsalted butter, cut into tablespoon-sized pieces
- ½ cup (100 g) semisweet chocolate chips
- ½ cup (50 g) natural cocoa powder
- ½ teaspoon instant coffee grounds (optional)
- 1 cup (200 g) tightly packed light or dark brown sugar
- ½ cup (100 g) granulated sugar
- 2 large eggs + 1 large egg yolk
- 1 teaspoon vanilla extract
- 1 cup + 2 Tablespoons (140 g) all-purpose flour
- ½ teaspoon baking powder
- ½ teaspoon salt
- Frosting: ½ cup (113 g) salted butter, softened; 8 oz (226 g) cream cheese, softened brick-style; 1 teaspoon vanilla extract; 4 cups (500 g) powdered sugar; Food coloring (mint green & regal purple)
- Additional Decorations: colored sprinkles, candy eyeballs
Instructions
- Preheat oven to 350°F (175°C) and line a muffin tin with paper liners.
- In a medium saucepan, melt butter and chocolate chips together over low heat. Remove from heat and whisk in cocoa powder, coffee grounds, brown sugar, and granulated sugar.
- Add eggs, egg yolk, and vanilla extract, mixing until smooth.
- Fold in flour, baking powder, and salt until just combined.
- Divide batter evenly among muffin cups and bake for 18–20 minutes. Let cool completely.
- For frosting, beat softened butter and cream cheese until smooth. Add vanilla and gradually beat in powdered sugar. Divide frosting and mix with desired food coloring.
- Pipe or spread frosting onto cooled brownie bites and decorate with candy eyeballs and sprinkles.
