Ingredients

  • 4 cups shredded zucchini
  • 1โ„2 teaspoon salt
  • 2 large eggs
  • 1/2 cup grated Parmesan cheese
  • 2 cups shredded mozzarella cheese, divided
  • 1 cup shredded cheddar cheese
  • 1 pound ground beef
  • 1/2 cup chopped onion
  • 2 cups pizza sauce
  • 1 green bell pepper, chopped
  • 1/2 cup sliced mushrooms
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon black pepper


Instructions

  1. Preheat oven to 375ยฐF (190ยฐC). Grease a 9×13-inch baking dish.
  2. In a large bowl, combine shredded zucchini and salt. Let sit for 5โ€“10 minutes, then squeeze out excess moisture.
  3. Mix zucchini with eggs, Parmesan, and 1 cup mozzarella cheese. Spread mixture evenly in the prepared baking dish.
  4. In a skillet, cook ground beef and onion over medium heat until browned. Drain excess fat.
  5. Add pizza sauce, green bell pepper, mushrooms, oregano, garlic powder, and black pepper to the beef. Simmer 5 minutes.
  6. Pour beef mixture over the zucchini layer. Sprinkle remaining mozzarella and cheddar cheese on top.
  7. Bake for 25โ€“30 minutes, until cheese is melted and bubbly. Let cool 5 minutes before serving.
