Ingredients
- 4 cups shredded zucchini
- 1โ2 teaspoon salt
- 2 large eggs
- 1/2 cup grated Parmesan cheese
- 2 cups shredded mozzarella cheese, divided
- 1 cup shredded cheddar cheese
- 1 pound ground beef
- 1/2 cup chopped onion
- 2 cups pizza sauce
- 1 green bell pepper, chopped
- 1/2 cup sliced mushrooms
- 1/2 teaspoon dried oregano
- 1/2 teaspoon garlic powder
- 1/4 teaspoon black pepper
Instructions
- Preheat oven to 375ยฐF (190ยฐC). Grease a 9×13-inch baking dish.
- In a large bowl, combine shredded zucchini and salt. Let sit for 5โ10 minutes, then squeeze out excess moisture.
- Mix zucchini with eggs, Parmesan, and 1 cup mozzarella cheese. Spread mixture evenly in the prepared baking dish.
- In a skillet, cook ground beef and onion over medium heat until browned. Drain excess fat.
- Add pizza sauce, green bell pepper, mushrooms, oregano, garlic powder, and black pepper to the beef. Simmer 5 minutes.
- Pour beef mixture over the zucchini layer. Sprinkle remaining mozzarella and cheddar cheese on top.
- Bake for 25โ30 minutes, until cheese is melted and bubbly. Let cool 5 minutes before serving.

- For extra flavor, add Italian seasoning or red pepper flakes to the beef mixture.
