This Cheesy Broccoli Chicken and Rice Casserole is a comforting, creamy family dinner made with tender chicken, fluffy rice, broccoli, and plenty of melted cheddar cheese. It’s easy to assemble, hearty, and perfect for a satisfying weeknight meal.
Ingredients
- 2 cups cooked chicken, shredded or cubed
- 3 cups cooked rice, white or brown
- 2 cups broccoli florets, fresh or frozen and lightly steamed
- 1 can (10.5 oz / approximately 300 g) cream of chicken soup
- 1/2 cup sour cream or plain Greek yogurt
- 1/2 cup milk
- 1 1/2 cups shredded cheddar cheese, divided
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 1/2 teaspoon paprika
- 1/2 teaspoon salt, adjust to taste
- 1/4 teaspoon black pepper
- 1/2 cup breadcrumbs (optional, for topping)
- 2 tablespoons butter, melted (optional, for topping)
Instructions
- Preheat the oven to 375°F (190°C). Lightly grease a 9×13-inch baking dish.
- In a large mixing bowl, combine the cooked chicken, cooked rice, and lightly steamed broccoli.
- Add the cream of chicken soup, sour cream or Greek yogurt, milk, 1 cup of shredded cheddar cheese, garlic powder, onion powder, paprika, salt, and black pepper.
- Stir gently until all the ingredients are evenly combined and coated in the creamy sauce.
- Transfer the mixture to the prepared baking dish and spread it into an even layer.
- Sprinkle the remaining 1/2 cup of cheddar cheese over the top.
- If using the breadcrumb topping, combine the breadcrumbs with melted butter and sprinkle evenly over the cheese.
- Bake uncovered for 25–30 minutes, or until the casserole is hot and bubbling and the cheese is fully melted.
- Let the casserole rest for 5 minutes before serving.
- Serve warm with extra fresh broccoli or a simple side salad if desired.
Notes
- Rotisserie chicken is a convenient option for this casserole.
- Frozen broccoli can be used without thawing, but lightly steam it first for the best texture.
- Brown rice works well if you prefer a heartier whole-grain casserole.
- For extra cheesiness, add a little Monterey Jack or mozzarella along with the cheddar.
