Description

This Cheesy Broccoli Chicken and Rice Casserole is a comforting, creamy family dinner made with tender chicken, fluffy rice, broccoli, and plenty of melted cheddar cheese. It’s easy to assemble, hearty, and perfect for a satisfying weeknight meal.


Ingredients

  • 2 cups cooked chicken, shredded or cubed
  • 3 cups cooked rice, white or brown
  • 2 cups broccoli florets, fresh or frozen and lightly steamed
  • 1 can (10.5 oz / approximately 300 g) cream of chicken soup
  • 1/2 cup sour cream or plain Greek yogurt
  • 1/2 cup milk
  • 1 1/2 cups shredded cheddar cheese, divided
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon paprika
  • 1/2 teaspoon salt, adjust to taste
  • 1/4 teaspoon black pepper
  • 1/2 cup breadcrumbs (optional, for topping)
  • 2 tablespoons butter, melted (optional, for topping)


Instructions

  1. Preheat the oven to 375°F (190°C). Lightly grease a 9×13-inch baking dish.
  2. In a large mixing bowl, combine the cooked chicken, cooked rice, and lightly steamed broccoli.
  3. Add the cream of chicken soup, sour cream or Greek yogurt, milk, 1 cup of shredded cheddar cheese, garlic powder, onion powder, paprika, salt, and black pepper.
  4. Stir gently until all the ingredients are evenly combined and coated in the creamy sauce.
  5. Transfer the mixture to the prepared baking dish and spread it into an even layer.
  6. Sprinkle the remaining 1/2 cup of cheddar cheese over the top.
  7. If using the breadcrumb topping, combine the breadcrumbs with melted butter and sprinkle evenly over the cheese.
  8. Bake uncovered for 25–30 minutes, or until the casserole is hot and bubbling and the cheese is fully melted.
  9. Let the casserole rest for 5 minutes before serving.
  10. Serve warm with extra fresh broccoli or a simple side salad if desired.

Notes

  • Rotisserie chicken is a convenient option for this casserole.
  • Frozen broccoli can be used without thawing, but lightly steam it first for the best texture.
  • Brown rice works well if you prefer a heartier whole-grain casserole.
  • For extra cheesiness, add a little Monterey Jack or mozzarella along with the cheddar.
