Description
Cheesy Buffalo Ranch Chicken Lasagna combines tender shredded chicken, creamy ranch-seasoned cheese, spicy buffalo sauce, and layers of melted cheddar and mozzarella with lasagna noodles. It is a rich, cheesy comfort food dinner with bold buffalo ranch flavor.
Ingredients
- 12 ounces lasagna noodles
- 3 ½ cups rotisserie chicken, shredded
- 1 packet ranch seasoning
- 24 ounces cream cheese, softened
- 1 cup buffalo sauce
- ½ cup milk
- 2 cups cheddar cheese, shredded
- 2 cups mozzarella cheese, shredded
- Ranch dressing, for topping (optional)
- Green onions, chopped, for topping (optional)
- Blue cheese crumbles, for topping (optional)
Instructions
- Preheat the oven to 375°F (190°C). Lightly grease a 9×13-inch baking dish.
- Bring a large pot of salted water to a boil. Cook the lasagna noodles according to the package directions until just tender. Drain and set aside.
- In a large bowl, beat the softened cream cheese until smooth. Add the ranch seasoning, buffalo sauce, and milk. Mix until creamy and well combined.
- Fold the shredded rotisserie chicken into the buffalo ranch cream cheese mixture until evenly coated.
- Spread a thin layer of the chicken and cheese mixture over the bottom of the prepared baking dish.
- Add a layer of lasagna noodles, followed by another layer of the buffalo ranch chicken mixture.
- Sprinkle with some of the shredded cheddar and mozzarella cheeses.
- Repeat the layers until all of the noodles and chicken mixture have been used, finishing with a generous layer of cheddar and mozzarella on top.
- Cover the baking dish tightly with aluminum foil and bake for 25 minutes.
- Remove the foil and bake for another 10–15 minutes, until the cheese is fully melted, bubbly, and lightly golden.
- Let the lasagna rest for 10–15 minutes before slicing.
- Drizzle with ranch dressing and garnish with chopped green onions and blue cheese crumbles, if desired. Serve warm.
Notes
- Soften the cream cheese before mixing so the cheese mixture becomes smooth and creamy.
- Use mild or hot buffalo sauce depending on your preferred level of spice.
- Rotisserie chicken makes this recipe quick and convenient, but any cooked shredded chicken can be used.
- Do not skip the resting time after baking; it helps the layers set and makes the lasagna easier to slice.
- Ranch dressing, green onions, and blue cheese crumbles are optional toppings but add extra flavor.
- For make-ahead preparation, assemble the lasagna, cover tightly, and refrigerate until ready to bake.
- Store leftovers in an airtight container in the refrigerator for up to 3 days.
