Ingredients
- For the chicken cutlets:
- 2 chicken breasts
- 1 egg, whisked with a splash of milk
- 1/4 teaspoon each garlic powder, salt, and black pepper
- 1/2 cup breadcrumbs
- 1/2 cup Panko breadcrumbs
- Vegetable oil, for frying
- For the garlic butter:
- 4 tablespoons salted butter, slightly melted
- 2 tablespoons mayonnaise
- 2–3 cloves garlic, minced
- 2–3 tablespoons chopped fresh parsley
- 1/4 cup finely grated Parmesan cheese
- For the Caesar dressing:
- 1/2 cup mayonnaise
- 1/4 cup sour cream or Greek yogurt
- 1/4 cup finely grated Parmesan cheese
- 1 tablespoon lemon juice
- 1 teaspoon Dijon mustard
- 1 teaspoon anchovy paste
- 1 teaspoon Worcestershire sauce
- 1 clove garlic, grated
- Salt and black pepper, to taste
- To assemble:
- 4 hoagie rolls or baguettes
- 3–4 cups romaine lettuce, chopped or shredded
Instructions
- Slice each chicken breast horizontally to create thinner cutlets. If needed, gently pound them to an even thickness.
- Season the chicken with garlic powder, salt, and black pepper.
- Set up a breading station with the whisked egg mixture in one bowl and the breadcrumbs mixed with Panko in another.
- Dip each chicken cutlet into the egg mixture, then coat thoroughly with the breadcrumb mixture.
- Heat vegetable oil in a large skillet over medium heat. Fry the chicken cutlets for 4–5 minutes per side, or until golden brown and cooked through. Transfer to a paper towel-lined plate.
- Prepare the garlic butter by mixing the softened butter, mayonnaise, minced garlic, parsley, and Parmesan cheese.
- For the Caesar dressing, whisk together mayonnaise, sour cream or Greek yogurt, Parmesan, lemon juice, Dijon mustard, anchovy paste, Worcestershire sauce, and grated garlic. Season with salt and pepper to taste.
- Spread the garlic butter over the cut sides of the hoagie rolls or baguettes. Toast them in a skillet or oven until lightly golden.
- Toss the chopped romaine lettuce with enough Caesar dressing to coat it evenly.
- Place a crispy chicken cutlet inside each toasted roll. Top generously with the dressed romaine lettuce.
- Sprinkle with additional Parmesan cheese if desired, close the sandwiches, and serve immediately.
Notes
- For extra-crispy chicken, use a combination of regular breadcrumbs and Panko as directed.
- Let the fried chicken rest for a few minutes before assembling the sandwiches.
- Greek yogurt can be used instead of sour cream for a slightly lighter Caesar dressing.
- Toast the bread with garlic butter just before serving for the best texture.
- For a spicier sandwich, add crushed red pepper flakes or a little hot sauce to the Caesar dressing.
