Description
This Maple Bourbon Pecan Chicken combines tender chicken thighs with a rich, sweet and savory maple bourbon sauce. Toasted pecans, Dijon mustard, apple cider vinegar, and rosemary add layers of flavor to this easy skillet dinner that’s perfect for a cozy weeknight meal.
Ingredients
- 1 1/4 lbs boneless, skinless chicken thighs
- 1/2 cup gluten-free flour
- Salt and black pepper, to taste
- 2 tablespoons extra virgin olive oil
- 2 tablespoons bourbon
- 1 cup chicken broth
- 1/4 cup pecans, chopped
- 3 tablespoons pure maple syrup
- 1 tablespoon Dijon mustard
- 1 tablespoon apple cider vinegar
- 2 teaspoons gluten-free reduced-sodium Tamari, or soy sauce if not gluten-free
- 1/4 teaspoon dried rosemary, crushed between your fingers
Instructions
- Pat the chicken thighs dry with paper towels and season both sides with salt and black pepper.
- Place the gluten-free flour in a shallow dish and lightly dredge each chicken thigh, shaking off any excess flour.
- Heat the olive oil in a large skillet over medium-high heat. Add the chicken and cook for 4–5 minutes per side, until golden brown. Transfer the chicken to a plate.
- Reduce the heat to medium. Carefully add the bourbon to the skillet and cook for about 1 minute, scraping up any browned bits from the bottom.
- Add the chicken broth, maple syrup, Dijon mustard, apple cider vinegar, Tamari, and dried rosemary. Whisk until the sauce is smooth.
- Return the chicken thighs to the skillet and spoon the sauce over them.
- Cover and simmer for 10–12 minutes, or until the chicken is cooked through and reaches an internal temperature of 165°F (74°C).
- Stir in the chopped pecans during the final 2–3 minutes of cooking.
- Remove the lid and simmer for another 1–2 minutes if needed, until the sauce has thickened slightly.
- Serve the chicken warm with the maple bourbon pecan sauce spooned over the top.
Notes
- Use pure maple syrup rather than pancake syrup for the best flavor.
- If you prefer not to use bourbon, additional chicken broth can be substituted, though the flavor will be different.
- Chicken breasts can be used instead of thighs, but adjust the cooking time to avoid overcooking.
- Serve with mashed potatoes, rice, roasted vegetables, or steamed green beans.
- For a gluten-free meal, make sure all packaged ingredients, including the broth and Tamari, are certified gluten-free.
