Description

This Stuffed Pepper Casserole has all the comforting flavors of classic stuffed peppers in one easy-to-make dish. Seasoned ground beef, colorful bell peppers, tender rice, tomatoes, and melted cheese come together for a hearty family dinner with minimal prep and cleanup.


Ingredients

  • 1 lb (450 g) ground beef or ground turkey
  • 1 medium onion, diced
  • 2 bell peppers, any color, chopped
  • 3 cloves garlic, minced
  • 1 can (15 oz / 425 g) diced tomatoes
  • 1 can (15 oz / 425 g) tomato sauce
  • 1 cup uncooked white rice, long grain or jasmine
  • 3 cups beef broth or chicken broth
  • 1 teaspoon Italian seasoning
  • 1 teaspoon paprika
  • 1/2 teaspoon salt, plus more to taste
  • 1/2 teaspoon black pepper
  • 1 1/2 cups shredded cheddar cheese or mozzarella
  • 2 tablespoons olive oil


Instructions

  1. Preheat the oven to 375°F (190°C). Lightly grease a 9×13-inch baking dish.
  2. Heat the olive oil in a large oven-safe skillet over medium-high heat. Add the ground beef and cook for 5–7 minutes, breaking it apart as it browns.
  3. Add the diced onion and chopped bell peppers. Cook for 4–5 minutes until the vegetables begin to soften.
  4. Stir in the minced garlic and cook for 30 seconds, until fragrant.
  5. Add the diced tomatoes, tomato sauce, uncooked rice, broth, Italian seasoning, paprika, salt, and black pepper. Stir until well combined.
  6. Bring the mixture to a gentle simmer and cook for 3–4 minutes, stirring occasionally.
  7. If using a regular skillet, transfer the mixture to the prepared baking dish. Cover tightly with aluminum foil.
  8. Bake for 35–40 minutes, or until the rice is tender and most of the liquid has been absorbed.
  9. Remove the foil and sprinkle the shredded cheddar cheese or mozzarella evenly over the top.
  10. Return to the oven uncovered and bake for another 5–8 minutes, until the cheese is melted and bubbly.
  11. Let the casserole rest for 5 minutes before serving.

Notes

  • Use a combination of red, yellow, or green bell peppers for extra color and flavor.
  • Long-grain white rice or jasmine rice works well in this casserole.
  • Ground turkey can be substituted for ground beef for a lighter option.
  • For extra flavor, add a pinch of red pepper flakes or a little Worcestershire sauce.
  • Store leftovers in the refrigerator for up to 4 days and reheat thoroughly before serving.
